Of all of my discoveries in 2021, the year that was supposed to "get back to normal" but didn't quite make it, perhaps the most delightful was Audacious Truffles. I encountered Bob and his grandson Leighton on my first visit to the Larimer County Farmers' Market where they were handing out delicious samples at their booth. It became my habit to taste, and then buy a box of 4 truffles as my weekly treat throughout the market season. They always had at least 4 flavors on offer, with varieties to appeal to different tastes -- maybe one fruity, one spicy, one boozy, one for the kids ... and sometimes a dairy-free offering, too. They have partnered with local farms, dairies, breweries, distilleries, etc. to come up with unique offerings from week to week, never repeating a flavor over the whole market season. I didn't realize that was the plan, or I would have been better about saving the box overwrap that described and listed ingredients for each truffle flavor (full disclosure -- for the vast majority of the market I just slid the overwrap off, not even realizing that it included all of this info) ... but a couple of my favorites since I started saving the info sheets were the miso caramel, Frieda Kahlo mole, and green mole truffles. I also remember a yuzu truffle that had a tingly pop rock sort of effect ... that one was probably my favorite of the whole market.
During the off-season Audacious Truffles are available at the Howling Cow Cafe or can be ordered for pickup, but I really am looking forward to next year's LCFM. Will Bob continue his new flavor streak? Will there be repeats of any favorites? Can't wait to see. read more
