(chestnut/châtaigne is plentiful in Corse and utilized from root to fruit. it's used for cabinetry/firewood, livestock feed, liquor, pound into flour for breads, pasta & polenta.. or plain roasted/peeled for cheap!

In April, the menu didn't provide much choice, but no matter, We had as a shared starter a brandade de cabillaud with raw scallop slices. Ample portion, matchless flavor. Main plates were roast chicken (well done, but not really interesting), and braised lamb shank done in a north African style (herissa based sauce, couscous with bits of fruit and aubergine.
