Le Chant pleases me with the superior quality of their food- it had something in it that makes it stand out from similar restaurants in the area. To every beef and fish filet, sprig of basil and micro-drop of virgin olive oil there is an angle of acute quality which is not meant to be wolfed down, it is meant to be slowly cherished to feel a satisfaction in what you ordered. On the liquid side of things, the menu of sweet wine, sparkly champagne and strong whiskey is neatly plotted on a chart for your convenience- it describes the type, the sub categories and age, the amount and the concentration along with many other aspects of a good alcoholic beverage. Don't want to drink and drive? No problem, Le Chant offers a equally large selection of natural, thick juices or still and sparkling waters. The courses are set up to make you 80% full (the optimal amount for proper satisfaction), starting off with a delightful set of breads with a small pipette dropper for adding precise amounts of olive oil, the next stage is the starters you ordered, usually cocktails of seafood or salad (I ordered a lobster cocktail) topped with a sprig of basil or other greens. The main course is the most exciting part, with fillets, steaks, risottos, pastas and even top notch quality beef, onion and tomato burgers together with fries made right in the kitchen. Deserts cool you down with either an assortment of sorbets, ice cream (for the kids), fruits, coffee, tea and pastries, served with a kind of warmth that is restrained inside the core of the dessert that triggers a pleasant feeling when the chocolate of vanilla melts in your mouth. Switching the subject, the staff (including the chef) are really kind and welcoming, always happy to answer questions and provide you with assistance and information, together with executive level service and food. In a Nutshell, Le Chant D'Ossieu is a quite French getaway that gives dishes quality instead of quantity, perfect for a birthday of even to just hop in for a quick chat in a quiet wooden, candlelit atmosphere, served with red wine or Chivas Regal.

Tonight was the perfect time to give them a try. I had a dinner with two friends who are not afraid to share and try new dishes and I did not to venture out into the Centrum. We made a reservation, and for Friday night the place at 19:30 was empty. We were seated promptly, and that's where the service ended :) We ordered the oysters, sparkling wine for the appetizers. Followed by 6 other dishes (starter size) which surprised us with the presentation and the flavor composition, especially the risotto! Kitchen staff made a huge effort with the menu. My San Francisco / Los Angeles foodie friends were impressed with the quality and creativity, but WTF is wrong with the service?! We couldn't order a follow-up wine, we got zero attention to our table, we had no interaction with the waiter what so ever, and he gave us this loud long exhales every time we asked for anything. We laughed, but it was uncomfortable, and I felt bad that I brought my friends here, I felt embarrassed. I overcame it - food was worth it. But if anyone from the management team is ever reading those reviews - please, train your staff, you could have much better foot traffic if you trained your people to be good servers. We were here with friends and opted for the chef's menu which is 4 courses paired with wine. The "mouse bouche" was a refreshing salmon puree and white citrusy foam. For the first course we had brown shrimps, which is a local small shrimp that tasted very meaty and delicious, served with fresh King crab, sesame seeds and citrus. The entire combination worked very well, it was paired with a white Savion Blank. Second course was a fried sea bass on brioche bread, served with Bauchat mussels and fennel, he fish was very fresh and the fennel added to that spring sensation of freshness in your mouth. Third course served with red wine, medium body consisted of "Poulet Noir", translated black chicken with crispy skin, confit stew of the leg, open ravioli, truffle, lime and smoked butter sauce, very tasty, an amazing experience, my taste buds were very happy. For the last course a sparkly sweet wine served with a trio of Tanka bean, chocolate and banana, whipped, foamed and crushed, not sure what the exact technique was but it was a very nice light dessert. The staff was new and not aware of the chef menu and wine that needs to be served with each dish. They brought someone from the kitchen to walk us through the menu. Unfortunately the chef was not there however we met one of the Sous chefs, he was very pleasant.

They do make up for it with their personalities. The restaurant itself is small and typically can hold groups of 2 to 5. The menu is small, but all the dishes are high quality. 1. Amuse bouche goat cheese - had a nice smoky flavor and fresh 2. Scallops - small but packed with flavor. There is a white sauce that complimented the scallops and the bread pastry with onions 3. Goat cheese terrine - very nice soft goat cheese mixed with onions as well as berry and veggies. Only wish there was more bread. 4. Sea bream - very nicely done with a fresh taste of the meat and a crispy skin. Pairs well with its sauce and tomatoes. 5. Ravioli - nicely done al dente with a herby sauce and packed ravioli 6. Bread pudding - one of the best I've had and came out fresh and hot. Comes with a white sauce as well as boozy caramel sauce. Overall, I would highly recommend this restaurant which has received very nice reviews for over 10 years. I'm glad we chose this restaurant during my stay here.
