On a brighter note, I am learning how to cure bacon. Not a bad skill to learn. The ham is ok but they don't do a sugar or a salt cure it is smoked but not bad. The rest of the meat is good. I even got the fat for rendering and the organ meat for the dogs. They even gave me a pail of lard ready to use. So overall a good experience

When I asked about them the girl at the counter got all snippy with me asking if that's all I stopped in for. Look, I swing by the Osceola Cheese Store all the time because they have free samples, and I generally walk out of there having spent seventy dollars on cheese that I tried free samples of. So right off the bat I was irritated. It's a big shop, with lots of ham for sale, but wow, they are super pricey. I know they will say it's because they do all their own smoking, but there's a similar style place in Arizona where I live called The Pork Shop that has way more reasonable prices. Not that I'm suggesting you drive to AZ for a ham. I'm just saying their prices are a bit on the high side. I might stop in here again, but probably not.

Here you'll find a long case full of lean, meaty slabs of goodness at prices that are well below the Kansas City butchers mentioned above. They'll cut just about anything to order, and the meatiest, tenderest slab of baby backs I've ever had came from here, at a Kansas City supermarket price. They also smoke their own sausages, hams, turkeys, and bacon. I'm not a huge bacon fan, but I can just keep eating theirs. I served one of their hams at a Christmas party, and people couldn't stop talking about it (or eating it-it was gone in minutes, it seemed). Their beef jerky snacks are hickory-smoked crack. Rounding out the inventory are barbeque sauces, rubs, and all manner of condiments, many made locally. I've never asked, but given their heavily agricultural surroundings, I would bet most of the meat is locally raised. Every now and then I get all sanctimonious and decide maybe I should stop eating meat. Then I find some of their stuff in my freezer, and, well, it's just not gonna happen.

They also have an amazing selection in store! So, when you go to pick up your order, you can grab another 15 items like I do. They even have cheese curds (I am probably the only one excited by that, but still). They also have some locally famous chicken wings. I haven't had the privilege to try them because they only sell them on Saturdays. If you are looking for good quality meat, locally sourced, this is the place for you!
