They truly bounce around, interacting with everyone and are on top of service - not only when your glass is running low... they pop by & discuss what you're drinking. They do allow samples, tho you (I) feel pressured to pick & get out of the way for the next person to order. This is a place that I need just accept being "that girl" to sample before ordering, even if it's something in my preferred categories. It just seems to be about a 50/50 shot as to hit or miss. Somehow, we find ourselves forgetting what we thought about Severance Brewing until the next time we walk in. That's crazy to me because it's definitely my top pick for the Sioux Falls stops. There is plenty of natural light. The music is good. The ambiance clean & fresh without feeling sterile/ generic or uninviting. The staff know their products & the selections are solid. The cheeky brew based on the 1 star review shows the playful side, despite the pettiness. Perhaps, that's the key to seeing Severance into my memory. Of course, we purchased cooler beers this time... soon to be couch beers or camping beers.
