On our way to our Airbnb, a friend and I stopped by Happ, which is located inside an industrial-style building that's incredibly spacious. There's plenty of seating, along with a dedicated area where beans are available for purchase. The barista was really friendly, and we ended up having an in-depth conversation about drink recommendations. When I settled on a cappuccino, he walked me through how each milk option paired with the espresso. I ultimately chose whole milk since it doesn't have an overpowering flavor like almond milk, which allowed the light-roast espresso (an optional upgrade) to really shine. I didn't fully enjoy the cappuccino during the first couple sips because the mouthfeel of the whole milk felt a bit too thick, which didn't pair well with the light roast. However, it became more harmonious as I continued drinking, and the highlight was definitely the bright sweetness of the espresso. I really appreciate a coffee shop that pulls a light-roast espresso well. The barista asked for my thoughts, which I shared, and he then pulled me a shot using their South Paw (house espresso blend) beans to try. I thoroughly enjoyed this light-medium espresso, which was bright and strong, without the unpleasant acidity or bitterness that often follows. I don't typically recommend ordering a straight espresso shot at most coffee shops, but Happ does it well. Overall, it was a great experience -- lovely coffee and friendly baristas who genuinely care about their craft. I left with one of their limited-release coffees (a Peruvian Geisha), which I'm looking forward to trying as a pour-over at home.

But in the past couple of years, a certain maps program has been rerouting me past Bridgewater and Churchville in favor of another route to Goshen. I can only assume it's because the company who owns that maps program (rhymes with frugal) is evil, and did not want me to find one of the cutest little cafes that opened in 2019 in the quaint little one horse town. How dare you: (rhymes with Kugal). And ya know... the only reason I decided to drive through Churchville and Bridgewater this time was because of a super slow driver on Route 42 that was driving me nuts... and I just couldn't continue on 42 behind them ANYMORE. So, 2006-ish red Subaru Outback, please accept my rescission of all of my prior comments made to myself in my car driving behind you, and let me thank you, for sending me through an old stomping ground and consequently to MTN Mystic Gallery and Coffee. So now that we've gotten those completely asinine details out of the way... MTN Mystic serves a number of purposes in the town of Churchville including but not limited to: A gift shop, a local cafe, an art gallery, a jam band spot, a painting class venue... the list goes on and on. I was in need of a small gift for someone who had been caring for Toast that weekend and came across a plethora of adorably potted succulents and cacti that were so reasonably priced that I ended up buying 5 of them lol. Yes... I did. And guess what... sitting here now, I'm sort of regretting that I didn't buy more. The two people that worked at MTN Mystic ( A woman and man - whom I believe to be the owners) were just about the sweetest people I've met in a long long time. They were both so welcoming and ready to answer any and all questions. Side note, they also think French Toast is very cute which immediately gives them both bonus points and street cred. Turns out that the woman there actually made a bunch of jewelry in a small section of the cafe/gift shop where I also ended up purchasing a pair of adorable bumble bee earrings from her stand for my friend. Now let's talk about the drink I got. I ended up getting an iced coffee and I asked them to add cream. I will say... it was a little heavier on the cream than I would have gone... but it was also the amount of cream that I always WANT to put in my coffee but never do lol. So... one won't kill me right? ;) Throughout the cafe gift shop you can tell that they pay attention to detail. The chalkboard signage, which the man there actually did, is quite colorful and absolutely beautiful. In terms of the iced coffee, they included iced cubes that were made out of coffee #ManyBonusPoints, and a funny little wacky plastic straw which... ya know... I don't know what to say about that one lol. But... ya know what... If they're trying to make that their signature, it's something that I certainly won't forget anytime soon haha. This is gonna be a legit planned stop on my way down to Goshen next time. No more listening to that twisted maps app (rhymes with Caboodle #TM). I'm 100 percent going through Churchville cause I just can't wait to see what I find at this little eclectic spot next.
