The is a restaurant in the Hotel du Palais. The hotel was originally built to be a summer home for Napoleon's wife. The restaurant is right up against the beach, but elevated somewhat which enhances the view. The elegance of this place cannot be overstated. We arrived for dinner & asked our hostess if it would be OK for us to have a cocktail out on the veranda first. She immediately summoned a staff member to escort us out there and see to our seating & order. When we were ready, our table inside on a window, was waiting for us. We ordered some water while we studied the wine book which contained a extensive selection. With the aid of their sommelier (in tails btw), we selected a nice Bordeaux for our meal. We were presented with a very tasty & refreshing amuse bouche consisting of two kinds of melon puréed with a bit of cream with a hint of mint to it.
Our first courses were a fresh tomato stuffed with crab & avocado and seasoned to perfection (It was amazing are my wife's words), and smoked Salmon with a dill sour cream accompaniment. It was delicious. There are photos of both from our visit. My main course was the fillet of Sole which was cooked & flavored to perfection. The presentation was affected tableside by our waitperson who skillfully filleted it for me. My wife ordered the John Dory fish which was exceptionally tasty. It was prepared perfectly and seasoned to enhance the natural flavors of the fish wonderfully. For dessert my wife ordered creme brûlée. Her words: "not only was it the best I have had, it was a huge portion". I ordered a chocolate mousse on coconut with merrange shavings on top and other enhancements. This is also pictured on the site. It was delicious! This was enjoyed with a glass of a very nice tawny Port. When we were through with that, out came a final gift from the chef: four little treats including a tiny macaroon & orange flavored dark chocolate candy. Haute cuisine at its best.
