The first time I went on a weekday in the middle of the day, so it was super empty and not the best because nothing was being made fresh- the meats and potatoes were kind of just sitting in bins so although the flavor was there, the cooled down temperatures really affected the taste. HOWEVER, I visited a few more times after that, these times all late at night, which really turned my experience around. I think at those times there were a lot more people and long lines, so everything was being made fresh and it being hot just made the food taste so so much better. I love how the toppings are all self-serve, and the hot potato is my favorite side. Carne asada, lengua, and al pastor are my go-tos. You'll want to add hellaaa green sauce to everything- I could literally drink that stuff straight. Love the big easy parking lot here, I'll mention that I saw a few security people checking all the cars and plates so I wouldn't recommend trying to park here and walk somewhere else!

I was able to snag two tacos for $4.50 that tided me over until dinner time. Now: bring your car because there's no place to sit! I arrived on foot, so dined standing up. Quite a variety of means - I'm a "safe" eater and enjoyed pollo and asada. I loved the self-serve salsas; the green salsa was delish and had a good little kick to it. Happy to have found this spot, and want to come back! 2026: 32/100

I wished the pineapple pieces were a little larger. Service was quick and efficient. They did have a few rags next to the dishes (as seen on my video) which was minus a star for me. Parking was fairly easy, I found street parking. Tacos were solid. Al pastor tacos, 7.8/10: Meat itself was spot on. Smoky, flavorful, wasn't overcooked. Paired super well with the piece of pineapple on top. The tortillas though were a bit soggy from all the juices, it didn't hold up well. Wish they let me customize the salsa, since the guy put a large scoop on. That being said, I did like how the tortilla soaked up the juices and marinade from the pork. Maybe it soaked it up a little too well. Salsa also was a bit watery. Asada Mulitas, 6/10: The melty oaxaca cheese they used was great with the asada. The asada itself was tasty and they did not skimp on the amount. Add some chili and salsa verde on top for a little kick. At other spots in the LA area, I've gotten mulitas that have been assembled and put back on the grill for a crispier tortilla. But this spot didn't do that, so I was missing on that texture experience. I have the same criticism about the soggy tortilla. Really brings down the score for me. Horchata, 8.5/10: I thought their horchata was superb. Tasted the rice, cinammon, and milk. It wasn't watered down at all. It was a great drink to offset the chilis and grilled onions.

The place is Alejandra's, and the creation is some of the best quesadillas you can get in LA. Coming up to the stand, you eye the menu and make your order, $8 dollars each or $10 for a dual topping type. There is potentially a bit of a wait due to every meal being freshly made on order, but it is a good and worthwhile wait, the staff, clientele, and food being most hospitable. At your order, purple dough is flattened to a blue corn tortilla, each tortilla freshly pressed and grilled in front of you. You watch it sizzle and rise brown, flip over, and continue its cycle to grow crisp. Topping highlights for me include squash blossoms and pork, which is chicharrones with a surprising crisp and crunch better than almost any other I've had, the ring of each bite echoing autumn leaves crunching under my feet, its condensed jerky flavour hemorrhaging in the still present sweetness of a meat once juicy. The stand provides a salsa bar with red and green sauces available, and other vegatative essentials- onion, cilantro, and pepper- serve as a lush and fresh forestry for the surprisingly substantial spice of the salsa to lick upon; piled upon the mountain of food and flavour, the green and red splatters evoked the Hollywood Hills, the red salsa smokey and particularly burning like the fires of last year. It's an addicting taste well worth the visit and short walk to sit and enjoy the meal in Echo Park.
