I asked for 1 1/4" steaks. I received 1/2" - 3/4" steaks. 3. I asked for full tenderloins (as in uncut), I received two packs of "labeled tenderloin" steaks. Appears a little (lot) short for a 600 Lb. Moose. 4. I had my moose caped and asked for all four feet. That didn't happen. 5. My guide advised me that the September 23 overnight expedited processing fee was $125. When I asked for the October 9th overnight processing fee, he raped me for $500. 6. No Disabled Veterans discount consideration on the $1400 bill. Needless to say, not recommended, to anyone, for anything!

I was impressed by the marbling on the Strips. The Filets were outstanding, too. One word of advice - ask the butcher to remove the silver skin off the back of the ribs. I was surprised it was on. Not a big deal, I'll know to ask next time. I look forward to trying their other cuts!

I ordered a prime rib to smoke for Christmas dinner and set the date to pick it up and discussed how many pounds I needed for the amount of people we are having. I got there when they opened and there was already a line around the corner. No fear, they have so many people there I was in and out in 20 minutes. Told them we added two more people on and he recommended how much and cut it. I asked him to slice off the bone and butcher twine it back together. They had told me there was $5 charge when I preordered on the phone and I told him that was fine. When I told the guy today that I was smoking it and would cut off the twine, season the part where the bone was and twine back together, he told me he would net it after cutting the bone off and didn't charged me. This is choice meat but it is as close to prime as can be and their price was cheaper than other butchers I checked with.
