We…read morewere seated shortly after arriving, and our waiter was attentive throughout most of the evening. However, service lacked toward the end of our visit. Since it was our first time dining at Republic of Texas, we were unsure of the checkout process. Our server mentioned that we could charge the bill to our room, but we wanted to leave him a generous cash tip. Unfortunately, he walked by our table several times without acknowledging us, and we waited over 20 minutes before I finally had to get up and practically head toward the kitchen to give him our payment and tip.
We still left a 20% tip because we understand how busy Saturday nights can be, but when guests are sitting there with to-go bags, it only takes a few seconds to check on them and see what they need. That was our only disappointment, and although it was frustrating, I would not take any stars away because of it.
We ordered the Bison Steak, Ribeye, baked potato, au gratin potatoes, quail knots, scallop appetizer, crème brûlée, bread pudding, and bread. Everything came out hot, fresh, and delicious. I ordered a white russian and my husband ordered one of their signature drinks, both were tasty. Our bill was $312 for 2 cocktails, 2 appetizers, 2 steaks, 2 sides, 2 desserts. Overall, we had a great experience and would definitely return if we are ever back in the area.
