    Such a gem!! We stopped here on the way to our friend's house and we were not disappointed!! They have a fresh salsa bar with about 9 salsas you can get yourself, along with bags for radishes and lemons. The lady who took our order was nice, and the service was quick. The inside was clean and the food was SO yummy. We got the Surf N' Turf which was probably one of the best I've had, and the rolled tacos which were gone in one sitting. Will be back when I'm in the Vista area.

    Love this taco shop, the tacos are good a bit smaller than most taco shops but tasty they always have fresh made salsas with a great variety of flavors the creamy green salsa is so good & super spicy! I had quesabirria tacos and it comes with the consommé which is really flavorful and I've also had the cheese enchilada plate that is also really good!

    Oh my tastebuds get the carne asada fries!!!!! Like $15 yes, I know thatd a lot BUT ITS SO GOOOOOOD!!!!!!! Fries are excellent crisp n flavor on their own. Add delish fresh tasting cheese that melts the carne asada to the fries and it's just a crowd pleaser. We got the rest on the side because kids are picky. Us adults enjoyed the guac crema and pico with ours. Man alive THIS and their top notch carnitas tacos especially on taco Tuesday for $2 each have me so grateful the Lord gifted us with taste buds. Seriously. Their salsa bar is without compitetion. They win! The ladies are so nice and see that you get what you need. Owner keeps place clean. If it isn't clean, they must of just had a lot of ppl through because I see them cleaning up as soon as they get an opportunity. Like Tuesday when I ate there they ran out of the container for limes and limes. Again they get A LOT of business, so I just let owner know and he got it and lady got some lemons. I go there a lot and they are rarely out of items but if you go and they are, just ask them, they can help you. Truly THE best carnitas and carven asada fries. Man it's only Thursday and I'm craving it writing this lol. I'll wait and be cautious because while it's worth it, I'll be patient for the discount day. Come on Tuesday!!!! lol

    I love their role tacos at Don Paco. This place has a nice salsa bar, plenty of salsa options. I also recommend the fish taco. They have plenty of parking. The prices are reasonable too.

    Clean and nicely decorated taco joint with very friendly staff. Prices are very reasonable The salsa bar is AMAZING. Everything sauce is so tasty! Tacos: - Carne asada: well-seasoned meat, very flavorful and moist. - Tripes (crispy/fried): too dry, I didn't expect them that crispy. Don't get me wrong: it was good. I'll try non fried tripes next time. - Birria (lamb): that was the best of the best. Delicious goodness. Juicy, tasty... I'll definitely go back and try more! Especially the fish taco...

    It looks like a very ordinary taco shop but behold: it is far better than your ordinary taco shop. The carnitas burrito is huge and is jam-packed with juicy, tender meat. It's delicious. The fish taco is good-sized (two of them would be enough for a meal) and it's covered in fresh slaw and sauce. The fish is battered and is very good. The quesabirria, which comes with lamb, is a fantastic greasy guilty pleasure. Even the side of chips was warm and salted. Finally, you can't miss the hot sauce cart sitting in the middle of the dining room. There are limes and a decent carrot/onion mixture and nine different sauces. And, unlike nearly every other taco shop, the sauces here are marked by name and heat. And, as someone who has a very high tolerance for spice, the "hot" sauces here are legitimately hot. Proceed with caution. Give this very un-ordinary taco shop a try. The food here is very good.

    Had a friend pick up some tacos from here and brought it back for us to try out. Yes, we're lazy, let's be clear about that. THE FOOD. - Chicken Taco | Slightly juicy and tender. The chicken was seasoned well. - Fish Taco | Probably the best one of the group. Lightly battered fish while maintaining its tender texture and flakiness. - Carne Asada Taco | I liked the carne asada's sweet and citrus notes. This was also tender & juicy. - Al Pastor Taco | More sweet than the carne asada, this taco had pineapple chunks strewn about. Very tasty. THE RETURN? I want more fish tacos from here!

    Nice staff. Many salsa options in the self serve salsa bar. Location is great. There's a few food places around if you have a child who wants something else.

    5 Rolled Tacos

    The rolled tacos are the bomb...each taco order freshly rolled and made to order and fried to perfection...nothing pre-made waiting in the freezer like the other taco shops... Had the chicken and potato tacos...filling was well seasoned and tender and the tortillas were not over fried and rock hard, topped with shredded lettuce, cotija cheese and crema. Salsa bar was full spectrum: mild to aye caramba! Thinly sliced radish, lime sections, and picked hot carrots complimentary.

    The Best tacos I've had since I moved here and probably some of the best tacos I've had in my life! I was never a fan of corn tortillas but I love the corn tortillas here. I love the carne asada and chicken tacos, the fish tacos are also amazing, the beans and rice are super good too! I a have not been inside to eat but I did call when I ordered from DoorDash and they were very kind and let me add the salsa I wanted. 100/10. I definitely recommend this taco shop to anyone looking for some good tacos in north county!

    Food (5/5 stars): Tacos Don Paco is a great taqueria in Vista! I like sampling different tacos during my first visit, so I went with the Carne Asada, Al Pastor, Fish, and Shrimp. The fish was surprisingly my favorite! It was fried to perfection and the slaw and crema complimented it nicely. My second favorite was the al pastor because of its flavor. The carne asada was grilled well but didn't stand out. And I really enjoyed the shrimp but the taco didn't need the bell peppers. Overall, I recommend checking it out and will be back for their Quesabirria Tacos! Experience (5/5 stars): * Price: reasonable * Wait Time: minimal * Service: good * Parking: there's a parking lot * Ambiance: it was a standard yet charming taqueria. I love what they did with the wall!

    They had a ton of salad choices to choose from, unfortunately, the Al Pastor tacos I had were nothing to rave about, lacked on the flavor.

You should be convinced by now that this is the real deal. I beg you: please do not order a bean and cheese burrito here. The adobada burrito is wonderful. It is perfectly-sized and the meat is freshly-cooked, well-seasoned and delicious. I have no doubt every item on the menu tastes great, probably even the bean and cheese burrito. With your burrito, you get two small plastic cups for salsa and a baggie for carrots or peppers or whatever. It is 25 cents for each additional salsa cup, which seems a little steep. But whatever you do, make sure you get the chipotle salsa. It may be the best salsa in history. It is honestly that good. I drove 25 minutes getting there and another 25 minutes getting home in order to try this place out, and there is a taco shop a quarter mile from me that I happily passed. I would make this drive every time.

The salsa was good IMO, though the rest of the table thought it was too spicy. For drinks we chose a Mexican Candy ($15) and Hibiscus Margarita ($14). They were okay. I think not really worth the price (barely any buzz). I'll probably stick with a beer next time but that's okay. For food, we ordered the Chile Relleno & Cheese Enchilada ($20), Queso Birria Taco Plate ($18) and for me, the Fajita Mixta ($26). Everyone liked their food. For me, I've had better fajitas elsewhere (Mariscos Hualtulco is my fav) but these were still good (except no green bell pepper for some reason). I noticed the *new* menu price for the fajitas was $29 (Mixta), but on the bill it was still $26 (old menu price). So be aware, the new price is coming obviously. I want to try the Molcajete but $38 is a stretch! Atmosphere was okay. It was a Saturday and although it was early, I expected a more vibrant feel, but maybe that comes later in the night. There was plenty of seating. Parking was okay, but the lot was oddly packed however even though the restaurant was not. I would come back to try something else on the menu, but with so many great Mexican options in our area, they need that extra something to attract more patrons. A happy hour with $10 margs for starters would be nice.

It was on a Friday night, the place was packed, and difficult to find a spot to park. The line to order was almost out the door, but still fast to get through, and we were quick to choose what we wanted before struggling to find a spot to sit and talk. After about 15 minutes, our order was ready and we got to enjoy our food. We started with the Carne Asada Nachos, Refried Beans on the side. The meat was flavorful, very tender, and plentiful atop a pile of crisp and fresh tortilla chips. The cheese was nice and salty and the sour cream was warm to the point where it drizzled over it all nicely. All in all, it was a very tasty start to the night. The only two issues I had with it were that the guac was a bit overly pureed, making it kind of runny. And the refried beans had a very sour flavor, making me think that they were over the edge of going spoiled. I had to thank my wife's aversion to eating beans, helping us avoid having them spooned on top, which would have ruined this course. I also had an Al Pastor Taco, Craft Coast Style. The whole it was crisped up well, the cheese forming a great crust on the inside of the taco. The meat was sweetly marinaded, flavorful and delicious. On top of it was a good amount of beans, onions, cilantro, and guacamole, making for a good sized taco without any overflowing. It was pretty damn tasty. So, our first trip out here had more highs than lows, resulting in a very positive initial dinner. I'm sure those beans were just a one-off, at least I hope they were. And there's still hope that the guac may have had too much lime or had been overly mixed this time around. A second trip is definitely in the cards, with more of the family to expand what comes to the table.
