Douglas Avenue Chop Shop addresses this need, providing a good old fashion butcher shop veneer with the curated selection of produce that you would expect as the millennial you probably are, because who else would bother searching for artisanal butcher shops on a website. The meat is all top-notch, though you're going to pay what is perhaps the highest prices in town for the privilege. If they haven't sold out of the cut you want, that is. The deli cases with the small selection of cured meats and cheeses is exemplary, offering many items that you're not going to find anywhere else. No longer will you have to substitute pancetta for gunaciale in your Carbonara recipe. During the week they make sandwiches using their meats and Crust & Crumb bread. They sell them in the shop and down the street at Reverie, but those are even harder to come by. The sausages are iffy. It's nice to see them making their own product, but the Dale's Pale Ale sausage had too much beer, affecting the texture of the meat. The duck sausage burst apart when I tried to cook it. Maybe it was just me. I did have a sage sausage at Fork and Fennel that was enjoyable, so your mileage may vary. The best part about DACC is that it's owned by Schane Gross, who also owns the excellent Anchor next door and Fork and Fennel down the street. As such, both of these restaurants have their own healthy supply of the products on sale at Douglas Avenue Chop Shop, and you can find them all over their respective menus. Judging by its immediate popularity, it's safe to say Wichita has been looking for a purveyor of fine meats for quite some time. In almost every aspect, it was executed successfully. It'll cost you, but Douglas Avenue Chop Shop is the best the city has to offer.
