Fantastic Food, Service, and Atmosphere! My wife and I are enjoying a weekend in Taos, NM, and selected SUCHNESS for dinner - an excellent decision! My wife ordered the Maine Lobster, and I ordered the Kale Salad and the 48-Hour Beef Short Rib. The warm kale salad was surprisingly tasty combined with the sweet potatoes, parmigiano, and vinaigrette. The Lobster with yellow curry, delicata, and corn, and the Short Ribs with chermoula and roasted vegetables, were both really delicious dishes with uniquely creative spices and sauces - not to mention their large portions. We finished dinner by sharing a delightful Sorbet Trio. Megan constantly provided super-attentive and immediate service, and special thanks to Chef Kevin for his innovative and creative culinary magic in his open kitchen. Had a great dinner tonight. We started with the kale salad, then shared two entrees: the Thai Lobster Yellow curry and the 49 hour short ribs. Both were amazing but the lobster curry was my favorite of the night. The flavors are so balanced and the presentation is beautiful. Finished the night with the celeriac mochi cake with tahini caramel and Concord grape sorbet. This is such a great place to eat with a small innovative menu and seasonal fresh ingredients prepared lovingly. Great service as well. May be my favorite Taos meal thus far. read more

This is the best chef in Taos presently. Exquisitely cooked, artfully presented, professionally served. A tired space rebirthed as an intimate and chic, contemporary vibe with open kitchen. Having lived in France, I know my food and wine. The duck confit and pork belly pistachio terrine with rosemary bread pudding was otherworldly. The Ora (New Zealand) King Salmon with fennel, sweet baby peppers, shaved summer squash and potato purée was an insanely creative blend of flavor. The only addition I would appreciate would be a classic Burgundian red or white and/or quality Italian red option in the space limited wine selection to accompany the masterful menu. Run. This place was unexpected! In so many ways! The atmosphere, the service, the music and especially the food! The staff was so attentive and helpful in our selections. The music was beautiful, Hermanos Guitterez playing in the background. Soft lighting. We had cocktails to start. Definitely recommend the spritz! Then wine to go with dinner. I loved the short selection that was curated just for the food. Now the food, let's get into that. You know when you take a bite of something and at first your eyes go wide with a "what is happening in my mouth" reaction? It was that. Then you get to the eyes rolling into the back of your head and you just close them in sweet ecstasy. The flavors were combinations of things you'd never think of. Textures that complimented each other so well. We sat there in amazement and joy. Each bite was heavenly. This was an experience. We will definitely be back next time we're in Taos. I will say- and this is nothing against Lamberts, because the food there was delicious as well- but I'd choose this place over Lamberts. The food was just that much more amazing. This is an amazing restaurant. We were here 1 day shy of it 1 year anniversary. Kevin and Meg are an amazing couple who obviously care deeply about their craft. I have read other reviews and see that the menu items are very different which is a very positive statement for how much care goes into their preparation. All we can say is that all the dishes we had were excellent and greatly enjoyed. We cannot recommend this special place highly enough. Note that Kevin preps and cooks ALL OF THE FOOD including the deserts by himself! Respect. read more

Such a unique little place. Definitely recommend a reservation as the space is very small with limited seating. The food was delicious. We had the shrimp Agua chile to start, the shrimp was like nothing I've had before. It was cooked and cut in a very interesting way but was very tasty. For mains we had the sea bass and the short ribs. The sea bass was fantastic. Very flavorful and cooked perfectly. The short ribs were cooked very well and the polenta underneath was wonderful. For dessert we had the dark chocolate tart. The tart itself is 82% dark chocolate and is bitter like that dark of chocolate is and pairs very nice with the blood orange sorbet. The tart was very creamy and smooth. I would absolutely come back to try other things on the menu. The service was great and very friendly. I enjoyed the entire dining experience. read more

We decided to finally try Suchness for my birthday. The food is excellent but atmosphere and service is not what one would expect from a fine dining establishment. The rock music with screaming electric guitar riffs set the tone. When I requested a change of music, I was told by our server (co-owner?) that "I will see what I can do". Her response was insincere and sure enough the music never changed. Art pieces on walls were interesting but the room is too brightly lit for a romantic sophisticated meal. The room is furnished with both white and dark formica tables. The white ones add to the excessive brightness and detract from the space. As for service, our server was running the room solo which meant our water glasses ran dry and she never had time (or perhaps not interested) in wine bottle service so we were on our own to refill our glasses. When she had time to attend to our table, she was courteous. As for the food, the best meal I have had in Taos: kale salad was wonderful, curry lobster dish excellent and my wife's fish was fresh tender and pleasant. read more

I was so hopeful about this restaurant. Apparently James Beard and I had a very different experience. I started with the smoked beet salad, which was inedible. It tasted as if the cook had poured an entire bottle of liquid smoke over it, and to add insult to injury, added smoked cheese. Truly inedible. I then had the lobster curry, which was incredibly bland. Anyone can add a can of coconut cream, but that a curry does not make. This plus a glass of house cabernet cost $130, What a waste! We started with the tiradero that was fantastic, perfectly sliced hamachi with corn nuts that surprisingly added the best finishing touch with the salty and crunchy flavor. For our mains, we split the rigatoni and the pork belly. The rigatoni was light and flavorful, something I was looking forward to after seeing the pictures online. One bite of the pork belly and we were sold - tender, flavorful, and accompanied by pureed black eyed peas and greens. It was incredible. I'm not normally a desert person, but I kept overhearing the recommendation to try the Hawaiian butter mochi cake and I'm so glad we saved room. One of my favorite desserts. Light, not too sweet, and full of flavor. Outside of the food, the wine was excellent, the service was perfect, and I love the quaint setting of just enough tables for it to be intimate but lively. I love when a restaurant has a small menu of things that they do really well, and Suchness is just that. You don't get an extensive list of options, but everything they do have, is done exactly right. Can't wait to come back! read more

Excellent vegan options. We had the wilted kale salad, rice cakes with kimchi, tempeh with celeriac and the rigatoni. An exceptional treat of well thought out dishes. The non alcoholic J & T delivered the G&T flavors. Cozy and clean dinning room with an open view to the kitchen. Great service. Can't wait to return. read more
