I ate here last night and had a fantastic dinner. The decor was lovely and the service was attentive, but let's get to the food: The soup of the day was cream of calabaza (like butternut squash) with ginger cream. I want more. Yes, now. This was followed by two perfectly seared pieces of tuna crusted with sesame seeds and Sichuanese peppercorns--not enough to make my mouth tingle, but delicious nonetheless. It was served on a bed of red lentils. Way tasty. I washed it all down with the local version of sangria, which--in addition to the usual ingredients--contained a fair bit of rum. :) We went a little overboard on desserts: chocolate souffles with Chambord cream (they take a little time to prepare, so order it when your entree arrives, or enjoy a glass of port while you wait), apple crumble, and creme brûlée (that last word is "brulee" in case Yelp still butchers diacritical marks). The first two were great, and I was too full to try the third, but those who did gave it a unanimous thumbs up. Note that if you're not staying at the El Conquistador Resort, this place can be challenging to find (it's across from the marina, at the bottom of the resort's funicular), but worth the trek. read more

I believe it was approx 2013 when my family was visiting my sister, brother-in-law and kids at the El Conquistador. The grounds were gorgeous and staff and especially the GM, Dermot Connolly, attended to everything. Such a great group of people. I digress, dinner one night was at Sting Rays. Oh my, I think of the Scallops with Lobster Risotto TO. THIS. DAY! I am pretty sure I only ate two of the scallops (they were delicious), however, the Lobster Risotto still fills my head. Seriously. This was, by far, the BEST dining experience we had at the resort. I still have dreams about the sea bass over risotto. It was literally heaven in my mouth. My partner laughed at me several times, as I never tend to finish my meals and usually cede him the remaining once I'm full - but this dish, I almost took his hand off with my fork when he tried to poach some. Turn right around and get yourself a quesadilla from the ballyhoo bar! You will save hundreds and have a better meal. I will say none of us ordered seafood (long story) but if you can't cook steak or chicken well maybe just don't cook it? My steak was overlooked and did not look or feel like filet which is what we paid for. The taste was fine the truffle mashed potatoes tasted like Idaho boxed potatoes, but I was starving. The only thing that was actually bad was my boyfriends stuffed chicken. The chicken breast was hard when you would chew it and the inside cheese was melted (at some point in time) but was now dry. Flavor was poor as well. They did comp that item but I wasn't interested in anything else after that. We were also the only table and it took well over an hour to get our food. First night at Las Casitas at El Conquistador and we didn't feel like venturing out to find a place to eat. So we made reservations at the on-property seafood restaurant. The restaurant is located at the bottom of the property in the hotel harbor with access from the main hotel through the funicular (think diagonal elevator) or possibly a boat...it would cumbersome if coming from off property. We sat outside which I highly recommend, weather permitting. The wine list was not very broad (mostly new world wines) and mark up's were high, I guess to be expected at a resort. Menu items were good by pricy. I had the swordfish which was good but not notable enough to remember what accompanied it (and no menu on the website makes it impossible to go back and check). read more

Dine outside for a nice ocean breeze while you eat. The meal was good with local fish and a lot of different seafood options, not quite sure if the meal justified the high prices on the menu though I have to say that the star of the meal was the dinner rolls. I know that sounds silly but these small warm rolls were delicious. My table kept asking for more and more. I gave it 3 stars because I think it says something when the dinner rolls are the best part of the meal. read more

This is just an average seafood restaurant at the El Conquistador resort. We weren't wowed, but the presentation of the food was pretty, it tasted good and the service was good as well. Came here with my wife on a date night away from the bigger family (over Christmas vacation). Service was prompt and friendly. Tuna main was fresh / high quality. But, the portion was small. Pear and Gorganzola salad was tasty and the bread was warm and fresh. Didn't get dessert so can't comment on it. Seems like a lot of people pass on dessert at the restaurants and head to the El Conquistador lobby for ice cream. read more

This restaurant was by far without a doubt the best restaurant in the El conquistador resort. The other restaurants and food options do not even come close to this restaurant. This place is the ONE restaurant the resort has going for it! My boyfriend and I sadly did not discover this restaurant until the last night of our stay at the el conquistador. This was after we suffered through many of the resorts overpriced and terrible food options. Needless to say we were completely blow away by the Stingray Cafe as our expectations were extremely low. We ate here for dinner inside, although the outdoor seating over looked the marina and also would have been nice. The restaurant was very clean and well decorated with an elegant sea theme. The waitstaff was also very attentive and helpful. The food- for an appetizer we ordered the grilled prawns which was amazing. The grilled prawns were large shrimp cooked in a tangy sweet sauce which was delicious and served overtop a risotto cake which was also very good. We also ordered the creamy lobster risotto which I saw listed as an entree but the waiter allowed us to order in an appetizer portion. The risotto was creamy and delicious and cooked very well. It had hearty pieces of lobster in the risotto and left me wanting more. For our entrees we both ordered the grilled filet with bacon shallot sauce. We like our filets cooked medium rare and they were cooked perfectly. Very juicy and full of flavor. The filets were served over a truffle mashed potato which was very good and you could definitely taste the truffle undertones. I also enjoyed the bacon shallot sauce which resembled a brown gravy and it really pared well with the truffle mashed potatoes and the filet. Overall I would recommend that if you are going to be eating at the el conquistador don't waste your time or money eating anywhere else! read more

This restaurant was outstanding! I was there with a work group and we had a party of 10 and everyone raved about their food! I had the lobster which was fabulous and a goat cheese salad...also spectacular! Others at my table enjoyed the scallops, filet and risotto. (all of which were delicious they reported!) Awesome service! Amazing ambiance (sit outside!) Wonderful food! We chose to eat here for a nice dinner out (it's pricey) rather than strip house. We can get a steak at home! The seafood was very good! Best restaurant at El Con! Also, there is a marina bar/grill across the way that I wish we had discovered earlier in our trip. We searched high and low for a decent restaurant within the El Conquistador and decided on Stingray Café after most others had terrible reviews. Well, while this restaurant was probably better than the others on the premise, we were not pleased with the quality of food and certainly not pleased with the $175 bill for two people (due to the subpar food). I would just say to skip eating at the El Conquistador as there are so many restaurants around Fajardo that are very good, have high Yelp ratings and truly cost a fraction of what the El Conquistador charges. We were so disappointed with everything at the El Conquistador that we checked out 3 days early and went to the Caribe Hilton in San Juan. It was a great decision as it is cheaper in every way and much nicer! read more

Best food at the resort and for a price that is actually appropriate for the quality. All the flavors were well developed throughout the meal; both my mom and I had a walnut crusted goat cheese salad with balsamic that we enjoyed, then I had swordfish over white rice with local roots. This was spicy but the heat wasn't overwhelming and it was tempered by the sweetness of the roots and a sauce on the plate. Mom had halibut, I believe, and it was also flavorful and flaked nicely. For dessert, we split an apple-raspberry crisp with vanilla ice cream that was delightful (we wished there was more of it!). All of the dishes also came out very pretty. The wait staff was attentive to refilling water (as usual, the only long wait was for the check) and all around the experience was relaxing and enjoyable. read more

Food was very expensive and very blah. Paella made with pasta?? I have no idea where the chef got the idea that this is how to make paella. Fish was over cooked. Desserts also very blah. For the price I expect a lot more. Service was attentive, but even on this I have to score them low, they missed part of my order (at least it wasn't on the bill). Very good food, particularly the dessert options. Nice wine list. If you have celiac, this might not be the best place. You may do better at Chops. Don't waste your time here. The food is way over priced and the service doesn't qualify for fine dining. Last night we tried majority of the menu and we found everything is either way over-cooked or unflavoured. For starters, we tried all the appetizers. The only note-worthy appetizer is the shrimp, but the shrimp is way over-cooked. The other appetizers are mediocre/unflavoured. Afterwards, we tried the sancocho chowder. Not only do they use Julien vegetables, but it's nothing like a chowder. It does have flavor for the broth but the essence is mediocre. Afterwards, we tried surf and turf, pasta, haddock with lobster risotto, and a steak dish. We found the steaks are all over-cooked as in super dry, and the haddock with lobster risotto without flavor. Put it this way, you won't find lobster chunks or any lobster flavoring in the risotto as noted by the waiter. In fact the whole dish is too bland. It just has no taste whatsoever between the fish and the risotto. As for the pasta, it was pretty good, but it is quite a bit. The sangria is awesome if you don't order by the pitcher. It is a difference of shaken via order individually vs stirred and tasting cheap. For desert, the homemade cream cheese guava souffle is tasty but it is a little heavy. As for service, expect to ask multiple times for something, such as pepper; drinks; or water. Also, don't expect your dishes to be cleared throughout dining nor glasses cleared after you finish a drink. In fact, the waiter at the end couldn't tell which glass was the clean one that he placed on the table. Overall, avoid this place like a plague unless you would like to drop over 100 per person for a mediocre time. PS, the food truck around the corner has tastier food for 1/10th the price. read more

We tried stingray our first night at el conquistador. My bf had the red snapper with mofongo risotto...on goodness! Whoever thought up that dish is a genius. The mofongo risotto is so unique and was delicious. I ordered the salmon with mashed potatoes it was good as well. A bit spicy but o love spicy. A must try curry prawns as a appetizer.
