I've never got a chuck roast with wide, narrow long bones in it. Briskets were cut thin and tough as the sole of a shoe. Anything we've tried to cook has been a complete disappointment. Only way to eat any of it was to smother it for hours. Some had to be tossed out because there was no hope.
