Its reputation precedes it as far as gig venues go--if an Aussie band is touring through Hobart, for years the Republic has been the place to play. Tour posters dating back years and years proudly display the Republic alongside Brisbane's Zoo, Melbourne's Corner, etc. But when I moved to Hobart and finally stepped into the famed Republic... geez, I was thrown. The stage is weenie and literally in a corner of the pub. There's no backstage--the band has to weave their way through the crowd wedged into a corner of the bar. That part of the crowd scores a "sidestage" view of the gig. The rest of the room is for the rest of the punters, but only after the dinner shift is finished and they've cleared out all the tables and chairs. That means the support act doesn't really start until around 10pm. Oh, and if it's a sold-out gig, make sure you get in early enough, because the capacity for the venue stretches around the corner of the bar to the point where you literally can't see the stage. It blows my mind that this is the premier gig venue for national tours through Hobart.

The salad particularly tasted good after a long couple of days off traveling. Overall the food was decent but nothing all that special or memorable. One of us ordered their biggest burger (over $22) and when it came out, it didn't look good, they said the patties and other ingredients tasted burnt and the bread was old. For a place in Salamanca, this was a poor experience and we will not be returning, how they're in business I have no idea.

The restaurant is located in Hobart CBD (city centre). If you are staying in this area, everything is pretty close so you can probably walk there from your location. The restaurant is located in a non-descript building so you might miss it since it is not very obvious that it is a dining establishment. The interior of the restaurant continues that vibe as it has an industrial like feel to it. The menu here is modern Australian fare which includes a lot of ingredients sourced in Tasmania. I came here to grab a light dinner. Opted for a chicken liver parfait on rye ($4.50) and grilled blue eye w/ braised sunflower seeds, endive and dried oyster ($36). Before the meal, I was served bread and butter. Butter was particularly good as it was very creamy. The chicken liver parfait was enjoyable, albeit a small bite. Texture is like a pate. The blue eye is a fish I haven't had before. I thought it was just okay. The fish texture is chunky. Though I was thought it was quite inventive that they used sunflower seeds in this dish like a risotto. Overall, my experience here was okay. I kind of felt like this restaurant is not the type of the place I would usually go to. Still I am glad to have tried Franklin because I like their concept of using local Tasmanian ingredients in their food which would be the reason to give this spot a try.
