I wasn't sure what to order so I went overboard and ordered a sampling. 3 meat (pulled pork, spicy sausage, chopped brisket), creamy Cole slaw, red skinned potato salad, Brad's special bean (OMG), green chili, and grandma's special chili. First, there was no standard printed or digital menu on the side of the food truck no longer. Instead, they had a hard-to-read dry-erase board with NO PRICES listed; strike one. We waited patiently in line for about 15-20 minutes (even though we were first), and when we finally got to order, we politely asked if we could substitute carne asada or barbacoa for al pastor on the smothered fries since we don't eat pork. We received a curt and rude "No!, We don't do substitutions!" I laughed and replied kindly that we just don't eat pork, then turned to walk away. Suddenly, the same person leaned out of the truck and yelled, "Ok, I can put shredded chicken tinga on it!" I laughed again and said, "No, thank you. You already said you don't do substitutions." Others were in line now and said "Wow that was rude how he said that to y'all." We ended up going to E&T Thai nearby and had an amazing meal, then returned to enjoy the brewery. As we sat, someone next to us mentioned they paid $40 for three tacos and smothered fries and weren't impressed. He said the tacos had barely any meat, and the fries were overly greasy. Not great value. Honestly, I'm glad we walked away. The rudeness and lack of flexibility saved us a lot of money and disappointment. Based on our experience and others' feedback, we won't be trying this truck in future sightings. Please do better -- a little kindness and clarity go a long way.

Though Skadi's focus appears to be primarily on sandwiches, the thing that caught my eye was their "Cody Mac" (sauce mornay, roasted carrots & garlic). I love roasted carrots and I LOOOVE mac n cheese, and this was a very good rendition of both. 'Adult' mac n cheese, if you will. The price of $9 seemed a little steep initially, but it was a generous portion and came with a delicious side salad. I would definitely like to try them again the next time I see this truck!

Hello Green Chiles, where have you been! Thank YOU! Chiles were good size and were complimentary to the Mac. Those were in fact Green Chiles.. firm with a good bite and texture. The cheese didn't overrun the Chiles all in balance. Now the chicken, no bbq sauce was needed as there was nothing to cover up! Juicy, moist and flavor filled with just a hint of smoke as to not over power the chicken. Even after an hour the chicken is still moist and seasoning again just enough to let the bird shine. Overall this return visit was worth the try. I appreciate owners when a customer is truthful about a review and is honest and can tell the owners what was an issue and allow them the opportunity to fix if not for you but all of their customers. Without feedback you can grow a cliental. For me you have to eat, how the chef prepares the meal and allow their work to shine without adding extra salt, pepper or kill it with sauces but that's just me! The staff was so engaging and I actually found out they grew up in the same neighborhood so that's a plus. Overall - I was really happy and yes, some of that chicken may become a midnight snack. I didn't order ahead because their only online ordering system seemed to be Doordash, and I didn't feel like dealing with that, so I expected that I'd have to wait a bit, but it still felt slow even under those circumstances for catfish, fries, and some spicy mac and cheese. It's a little weird that the only extras it came with were two pieces of untoasted, plain white bread and some hot sauce. No sauce for the fries, or for the fish. Not unbearable, but a little stingy. Maybe there were sauces I could have grabbed, but the staff certainly weren't interested in suggesting anything. The fries were solid, with a good batter. If you're going to go there (and hey, maybe you're the sort of person they're nice to), definitely get some of those. The catfish was about what you'd expect from the catfish, so I wasn't mad about it. And mac and cheese was fine, they didn't skimp on the poblanos. If you happen to be in the area and need barbecue, it's probably an okay choice, but if you already have places you like, this may not be worth it. They're probably indifferent to your patronage either way.

I happened to be inside the liquor store for my side hustle gig this afternoon. After I had been done with it I stepped outside to go back to my car. That was when I noticed the truck. The time was about 6pm. I sure was hungry for some protein-oriented light snack. I wasted no time to go there for a few items. And it did not disappoint. As the business's name says it all, this is a woman-run truck. Way to go, Mama Rosita! She had her kids with her (they were sitting right outside the truck in lawn chairs quietly supporting their mom's business. You got to take care of your mama, right?? Simple setting in a smaller truck but I could tell that what comes out of it would be of some quality. My anticipation grew. Mama Rosita's smile (as soon as she saw me as I walked up) was so welcoming. She was also kind in her speech. I told her I wanted a few tacos. And my choices were: Asada and Al Pastor. Each taco was only $3.50. I simply couldn't believe the reasonable price. She immediately got my tacos going. As I was patiently waiting by standing right in front it, I could hear a metal spatula hitting the griddle as she cooked the meats. The accompanying sizzling sound tantalizing me to the core. Once the food was done, she handed me a plate of my two tacos beautifully prepared and placed on it. As soon as I got back to my car I started devouring them. Both of the tacos were well-seasoned with all sorts of goodness. She gave me a green sauce on the side (the other one (red), she said, was a bit spicier than the green one) tasted authentic (although I am not sure if I even know the taste of the authentic Mexican taco sauces however.) Thank you, Mama Rosita for being a mighty woman business owner in the greater Denver. And discovering you was a treat!!
