I even buy the rough eggs, because shell being pretty & smooth isn't an issue for me, it's the quality of what is in the egg shell that I care about. I also like to get the larger eggs when making egg salad or deviled eggs. I still buy the larger pack of 5.5 dozen works for me too. Also, I know a lot of people have a preference for brown over white eggs, but there's no nutritional or taste difference between brown and white eggs; the shell color is determined by the hen's breed (white-feathered hens lay white eggs, reddish-brown ones lay brown eggs). There are even hens that pastel coloured eggs ( I used to raise those at my parents farm). Brown eggs just cost more because the hens that lay them are larger and eat more feed, not because they are somehow superior. The true quality, flavor, and nutrient content depend on the hen's diet and living conditions, not shell color. So, there's that tidbit of information. Happy baking.
