The Gar has a flavor in between chicken and fish and has a tougher texture so I gave mine away after a few bites to another family member who had been staring at me, hoping I wouldn't like it and would want to give it away! I did like the buffalo though. It looked like a small rib bone. Several of my family members were skeptical because they were remembering buffalo fish as having lots of small bones. This, however; was one bone the size of a large finger and the rest was meat. Worry not and enjoy.

So whenever I'm passing through, stopping at Billy's Boudin & Cracklin or Randall's Cajun Foods is a must for me. I went to Randall's today. About 5 months ago, I stopped in and the cracklings had clearly been sitting for a while, they were tough. I explained my concern and even offered to pay extra just to have a fresh batch cooked. After going back and forth, they finally made them fresh, and they were exactly what I wanted. Fast forward to today, I called ahead and specifically asked for fresh cracklings. The young man on the phone said okay, no problem. I walk in 5 minutes later and there's already a bag waiting. I asked where they came from and she told me they were cooked that morning. That was an immediate no for me. If I'm spending $21 for a pound, I don't want tough, sitting all day cracklings. Go ahead and put those back. I ended up trying the boudin balls, big mistake. You could tell they had been sitting too. At that point, I didn't even have the energy to go back and forth or ask for a manager. Honestly, it should be a given. I plan to come home for Memorial day and I wanted a catfish that would not be muddy tasting and fatty. She is selling me the Yellow catfish, also known as the flathead or Appaloosa catfish. It is a lean catfish without all of the fatty underside that I hate so much! I got educated on the various types of catfish I could purchase like white catfish or channel catfish and now I cannot wait to go pick up my yellow catfish. Their fish is fresh off of the boat!!
