I made my reservation with ease for dinner on a Saturday night at 6:30 PM (2030 if you're European) and was the first to arrive to the restaurant. I had the whole place to myself for over 45 minutes until other people started showing up. I was promptly greeted with a smile and warm welcome from the hostess at the front reception area. My coat was taken, and I was escorted down the hallway to the main dining room which was filled with mirrors, a fireplace, and elegant lighting. The mood was very relaxing and lounge-like. My German is still limited, but I am learning, but that didn't matter since my server was fluent in English. I was offered some sparkling wine that's local to the region and the menu. You could order ANYTHING off the menu as long as you ordered 4-8 courses. I roll big, so I rolled with 8 courses this evening. I had a selection of appetizers, meats, vegetables, and of course desserts. Everything is seasonal, but I really enjoyed the Icelandic cod, the venison, and all the desserts. The chef provides little tasting throughout the meal in between courses and a small sampling of chocolates at the end. I never had to wait for my drinks to be refilled, the staff was top notch and catered to me and the other guests throughout the experience. I had such a great experience, my wife made reservations so she could join me two weeks later. Again, we had a lovely evening out at the castle. I recommend this restaurant 100%!!!

    The Schwarzwald region is sort of the gourmet capital of Germany. There are more three Michelin…read morestar restaurants in this region than, all the major cities in Germany combined. This restaurant however, is a two Michelin starred place and, we had booked here for dinner tonight, as part of staying at the hotel. Jörg Sackmann is the owner / chef at this restaurant and, it's located in the ground floor of the hotel. The decor is very classic and elegant however, feels like it is stuck in the 70's. It's he type of restaurant that would attract an older crowd. It's small and seats about 25 people, at the most. There is not enough isolation between the various restaurants at this hotel to make it that extra special. You could hear the noises from the other restaurants, from where we were sitting. They have a small 5 course tasting menu, or a 7-8 course tasting menu. They also have a fully vegetarian tasting menu which is very nice. We have eaten in three of the two Michelin restaurants in Germany and this place would rank number 3 on our list. The start of this menu was superb as was the end, however, the middle (main courses) were too sweet for my liking and of course the feeling was mutual also for my dinner guest. The service here is good but missing the finer touches of a restaurant of this caliber. The staff were not great with recommendations and to their credit were extremely helpful when asked. Some nice special touches were our names on the table and our names on the butter dish. I have never experienced that in any top end restaurant to date. I would give the service 4 stars. I was a bit mixed on the flavours and hence the four stars. The intensity of flavours in some of the courses was amazing however, some of them were not so great. When I compare it to other places that have two stars, the wow factor was lacking a bit. The chef was generous but, not as generous as other places, we have been to. The sweet tray at the end looked fabulous but, failed to wow me. The coffee was also ordinary. I would give the food 4 stars. The wine list is extensive and I loved it. They also have an excellent selection of local wine, which is great. We had a fantastic red from the Wûrttemburg area and I absolutely loved it. The Reisling Spätlese for dessert from Mosel region was also fabulous. I would happily give the wine list a 5 stars. This restaurant can be way more than it is right now. I would not give it two Michelin stars but, would more than happily give it one. Maybe even 1.5. Since Michelin have no halves this place has two ;-)) overall experience here for me would be 3.5-4 Yelp stars ;-)) Would I come back here again ? Probably not. It's not edgy enough for me and, given the choice available across the country, I would go back to other places before I came here again. Having said that I enjoyed my meal enough to give it 4 stars.

We later learned it had a Michelin star, and it fully earns it. As a warning, you will pay for it; it is far from inexpensive. However, adjusted for the general prices in Basel, Switzerland -- which are all far higher than you will experience in either the U.S. or even (to a lesser extent) in the rest of Europe -- it is costly but not out of line if you are looking for high-end dining. Before I get to the food, I want to mention the service. It was efficient, timely, attentive and the friendliest we experienced in any city. Our main waitress in particular was wonderful about answering questions and even giving us some information about the area. I say main waitress, because the small team of servers all took responsibility for everyone in the dining room to ensure you were never left wanting. In fact, each time an item was served, more than one was recruited to make sure the wife and I received our respective dishes at the same moment. Whenever we asked questions, even about things like Basel itself, they were more than happy to take the time to answer and throw in little bits of useful info. In general, while prices in Switzerland are very high, we noticed that once you've paid the price, they are generous with everything. Bel Etage was the epitome of this; we didn't want a whole bottle of wine despite them only selling it by the bottle, for example, so they found us a vintage that had been opened and gave us choices from that. They also threw in about 2 small amuse-bouche type dishes along with the meal. So, let's start with those amuse-bouche dishes. The first was thinly sliced pork. And when they say "thinly sliced" they aren't kidding around. It's almost not there, and melts in your mouth. The other was a lemongrass and citrus shot, which was like an exceptionally good wheatgrass smoothy that was actually tasty, along with some excellent paté on rye. The bread service featured three types of fresh bread, with two types of butter: one with volcanic salt and the other lemon basil butter. The volcanic salted butter was fantastic. Although not what one may think of when eating in Northern Europe, we also had a chilled lemongrass coconut soup with teriyaki rabbit was a savory, gazpacho-style cream soup that wasn't too heavy. The entree of venison (roebuck) in a vanille sauce and pancakes was, hands-down, the best venison dish I've ever eaten. And while the spinach and gorgonzola ravioli with canterelles and macadamia nuts wasn't quite to that level, it was likewise far, far above par. As a second opinion, my wife liked it perhaps more than my dish. The dessert was likewise great. The Bolivian chocolate cubes were extremely rich without being sickeningly sweet, and the woodruff herb ice cream was likewise tasty, but not overly sugary. As a note, again they threw in a little extra for us, with an assortment of 6 pralines in three flavors -- so my wife and I would each get one -- as part of the complimentary portion of the meal. All of them were great, with rich filling. And when asked, yes... they made them in-house. All in all, as you can tell, I recommend Restaurant Bel Etage in the highest terms.
