What I would have appreciated was a simple apology and an effort to correct the mistake without debating me over an item I paid for and did not receive. She offered me a free egg roll if I came to pick up the rice at a later date, but when they ultimately agreed to deliver the rice, the egg roll was no longer included. It's not about a free egg roll, it's the principle. If you were willing to offer it for the inconvenience when I picked up the rice, why not include that same gesture when correcting your own delivery mistake? That would have at least shown some effort toward good customer service after an unnecessary and unpleasant interaction. And after making it seem like getting the rice delivered would take such a long time, it arrived in about 10 minutes. A simple mistake could have been resolved quickly and professionally. Instead, the owner's attitude and unwillingness to accommodate a customer over the restaurant's acknowledged mistake turned it into a much bigger issue.
