I tried the steak quesadilla, a chorizo taco, and a lengua taco. You can really taste the quality of the ingredients, especially the tortillas, which tasted freshly homemade. The lengua taco was easily my favorite! The meat was incredibly flavorful and had the perfect texture. I've had lengua before that was rubbery and overly chewy, but this was tender and cooked beautifully. The green salsa added just the right amount of heat without overpowering the flavor of the meat. The chorizo taco was also excellent! The meat was well-seasoned, savory, and had just the right amount of saltiness. It came with similar fresh toppings and salsa, which complemented everything really well. As much as I enjoyed it, I would definitely order more lengua tacos next time! The steak quesadilla, however, wasn't my favorite. It was completely different from what I typically think of as a quesadilla. Instead of a soft tortilla folded over melted cheese and meat, this one had a soft, house-made tortilla on the bottom with a layer of melted cheese, followed by steak and the usual toppings, and then what seemed like a hard crispy tostada-style shell on top. There wasn't any additional cheese between the steak and the top shell, so the layers felt pretty separate rather than everything being melted together. I'm not sure if this is a different style of quesadilla, but it definitely wasn't what I was expecting! It wasn't necessarily bad, just not my preference. I much preferred the tacos, especially the lengua! Another thing I appreciated was how quick and efficient the service was, especially considering how busy and lively the restaurant was. I also love that they're open super late, making this a great spot for a late-night bite in Vegas. Overall, I'm so glad I finally got to try Tacos El Gordo! The quality of the food, fresh ingredients, fun atmosphere, and efficient service made it a great experience. Although the quesadilla wasn't quite my style, the tacos more than made up for it. What drew me in to this restaurant was a past appearance on the Maury Povich Show, where I took a paternity test for someone who claimed she was my daughter. The end result? I was cleared, so Maury pointed at me while telling her that he's "Not yo' daddy." And so I visit Nacho Daddy on occasion, strictly for celebratory reasons. Birria nachos are excellent, made with a high quality shredded beef with pickled onion, cilantro, sour cream, cheese, and lime on top of a stack of chips. Having birria without consommé was new, but this one didn't really need it with all the flavors jumping out. Another recommendation is the cheeseburger nacho, an Americanized version with ground beef, bacon, cheddar, jack, queso, onions, tomato, and lettuce. The 'mini nachos' are perfectly sized for a light meal but if you're hungry, get the full size order which is huge and shareable.
