That's why with slow-cooked ribs (if done right), the meat is tender enough that it can be pulled off the bone (with relative ease). These ribs though, they were cooked too quickly (you know, because of the frying) at too high a temperature (you know, because of the frying), and what I was trying to eat was... shoe leather. Deliciously seasoned/sauced shoe leather, but shoe leather nonetheless. I was tryin' to go at it like a literal dog, before I gave up; a lot of the meat was tough stringy bits that I ended up throwing away. Butttttt, the fries were really good.
