We took Beef Tartar for appetizer. It looked like they have it in France except for it was served with hard toasts instead of hot fries. And tasted more like a fish tartar, what I mean is that they marinated the meat with too much of lemon juice and other ingredients that go better for the fish dishes and covered the flavor of the meat here. I'd put more olive oil, vinegar, Worcestershire sauce and an egg yolk, no any lemon at all. Paella with all peeled seafood was delicious. Good amount of shrimps, fish, mussels, clams and even octopus -all fresh and soft. I think they used not Arborio rice, but it looked like Jasmin rice to me. And added roasted bell peppers gave more aromas to the dish. Filet with a Roquefort sauce was tender and mild, delicate flavor, cooked to our liking - rare. It was served with grilled vegetables. They have a lot of traditional Spanish tapas, such as Pulpo a la gallega (octopus), calamari, manchego cheese, jamon, fuet etc. As well as Mediterranean style main courses: pastas, paellas, fish, seafood, poultry and meat. All that we ordered was savory, sapid and yummy. Desserts were on a tray in display. Among rice pudding, Crème Brule, chocolate tart etc - we chose traditional cheese cake. It was very appetizing. One thing to note is that the restaurant closes really early, everyday at 6pm and then I think they're not open on Mondays. The servers were super nice, they actually spoke some English to us and conversed with us about where we were from, how long we were staying, a little bit about Madrid, and then recommendations on the menu. We ended up all getting the paella valenciana, which they took our little trays and scooped individual servings for everyone from their large pan. Unforunately, because it was from the large pan that had just been cooking the entire day, the rice and meat was very dry. There was a bunch of different meats and seafood on top, including chicken, chorizo, shrimp, and clams, but they were all pretty dry. However, the portion size was pretty decent. We also ended up getting the Spanish omelette which had potatoes inside, which was pretty delicious. Overall, the restaurant was pretty nice, but unfortunately the paella was pretty dry that I wouldn't recommend going late in the day.

The secret of all good paella dishes means using just the right amount of saffron (their ample supply they protect like gold!). I had the opportunity one Sunday afternoon to watch the slow cooking process (most paellas take about an hour) through the glass display behind which I sat at the paella bar. First the frying of the meats and seafood in olive oil, then the sautéing of onions, green beans, red pimientos and bathed in a chick stock broth. When all that flavor mends together and has had a chance to gently bubble, the saffron is stirred in, bathed in a cup of white wine. The rice is added and after the rest of the hour has passed, there you have it with a sprig of rosemary lying across the top, your own paella, basked in a soft warm bed of yellow rice with the clam and mussel shells around the perimeter, the half-buried shrimp, chicken or pork spread sumptuously around the center. Vegetarian dishes are available upon request. For a special treat try the black (squid) inked paella or the socaratt style (lightly fried on the bottom). The usual tapas dishes are tasty to try: patata bravas, queso manchego, boquerones, croquetas de Jamon serrano; all together savored with a glass of red wine (Spanish of course) swirled by your tongue. Top this off with Catalan creme brûlée and your dining experience at this Condesa gem, Oh Madrid! Is complete.
