My wife and I recently dined at Quatre B. I could tell you what we ate but it wouldn't matter: their menu changes daily. I love that. You can tell that they honor their ingredients. They source what is fresh and in season and utilize the ingredients to create sophisticated dishes.
The restaurant's atmosphere is also aspirational. It is striving for a sleek, modern, chic feeling but it just barely misses the mark. They could probably use the input of decorator. But the misses were minor and the dining room was sufficiently warm and inviting.
I believe the restaurant is run by a husband (chef) and wife (front of the house) team. We were there on a Monday, so that might explain it, but it felt like we they were understaffed. The dining room was mostly full but there were only two people working the entire room. This resulted in a few lapses in service, but again, nothing major.
The food was the real star of the show. And speaking of stars, with a little more effort (maybe some extra help up front), I could see Quatre B earning on of the coveted Michelin stars sometime in the future. They are on the right path. They just need to keep working.
If you want an excellent meal in Rennes, at the right price, you could definitely do worse than Quatre B. read more
