If a dish has a sauce that usually comes on it and you would prefer a different one not a problem! Im not saying the service is always polite but the food is good. My personal favorite is the homemade ricotta cheese ravioli with nuts and the tomatoes and creme sauce. Ravioli de Ricotta y nueces con sala rossa. Yum! Despite being told by hotel concierge that they didn't take reservations, this is not correct. If you can navigate the Spanish-only website, they DO offer online reservations. The restaurant is huge so if you go early you could easily walk in, but the benefit of the reservation was having a prime table set aside on the edge of the open-air restaurant.

We stuck with traditional Italian options and our son went for the Lomo a lo pobre. (Steak, fríes, 2 eggs, and sautéed onions). Definitely recommend!!!
