Overall, the pie has good flavours (the parmesan adds such a nice salty finish) and the toppings are well spread out allowing each bite to incorporate all the ingredients. While Pizza One has tons of developed recipes, my husband always goes with his custom pizza ($18.50 for a medium): pepperoni, mushroom, onions, and extra cheese. His wasn't as impressive as the chicken bruschetta, the pepperoni were larger slices, which meant they needed to be toasted longer as the soggy centre ends up tasting like bologna. With the extra cheese, Pizza One should consider applying less marinara to ensure the crust doesn't become doughy and soft. They are not a thin crust pizza, but their crust is still slimmer than what's typically found at the chains. The chicken bruschetta's crust was nice and airy, and the bottom lightly toasted until it almost had a Pizza Hut crunch and flavour but without the greasiness and heaviness. I've never had it myself, but my husband claims it's like New Orleans's pizza crust.

Luckily Patrick had not turned off the oven yet and was kind enough to make us a small Donair pizza before wrapping up. They're super friendly and definitely made us feel super welcome as it's our first time in town. We took it back to the hotel so we don't stop them from going home for the day. The pizza itself was absolutely amazing. Perfect balance of toppings, cheese and crust. It's so perfect that even after 4 slices, I don't feel bloated. I really liked the sauce and the wonderful ingredients that make it such a great combination. Definitely need to come in - am sure it's one of the best in town.

And we hadn't been bothered by mosquitos yet in Muskoka (apparently it had been "too hot"), so we'd been rather cavalier with the mosquito spray. Cue "Lord of the Valkyries" from "Apocalypse Now" with the entrance of the mosquitos. The mosquitos particularly seemed to be fond of the picante pizza. That's when they made their first appearance - I'm guessing it was because of the honey on the pizza - and they dissipated somewhat when the food was gone. Some candles would have been nice to help with our mosquito naivete but the restaurant didn't have any. We got a seasonal special of Niagara-on-the-Lakes peach caprese. They had me at peach, caprese, AND Niagara-on-the-Lakes (one of my favorite places). The dish consisted of peaches, bocconcini (small fresh mozzarella balls), cucumbers, and peach gazpacho. It was good but small and honestly I thought it would be better. We were told the aforementioned picante pizza (salami, fior di latte mozzarella, honey) was the most popular. The salami was cut too big so some bites were all salami and some bites were no salami. It was good but I'd get a different pizza in the future. There's a similar pizza ("the sweet and heat" at State of Mind) in Palo Alto near where I live that works a little better that's topped with bacon, jalapenos, and honey. The husband and daughter liked their margherita pizza. My favorite dish was the pappardelle with short rib ragu. Short ribs always make everything better. The server was really nice and volunteered some places to visit in Muskoka.

Hope it was worth the ego, to pull that, as a former employee I'm very very excited to watch your ego ultimately lead to your downfall. Also, the RCU. Has had numerous reports about the lies about "white sauce" being egg based (when it's just mayonnaise) Imagine charging so much money for mayo. Then again, this chefs face would look pretty appropriate smeared with cream and white sauce. Because his own ego and lies led to this. Enjoy! Hope they bring you to your lying knees.
