Not even a question the go-to place for kitchen knives. Dedicated stores are few and far between in the States, so Phoenix is super lucky to have one. Obviously a great resource for anyone in the food industry, but also one I'd recommend to any home chefs as well. Mostly speaking to my pre-rona experience, Phoenix Knife House has an insane selection of Japanese knives - they might have European or American brands but don't quote me on that. Something you lose out on at a department store or shopping online is the ability to hold and compare knives, because a kitchen knife is really a Cinderella glass-slipper type feel: everyone has a different preference when it comes to handle styles, weight of the blade, etc. They're super helpful - can pretty much tell them what size knife and knife style you're looking for, and they'll bring them all down for you to compare. Lots of variations of carbon steels and stainless steel options. Also they're not judgmental when it comes to pricing - some knives can get really high up in the triple digits, but you can find great pieces even at the lower 1 range or possible double digits. It's not exaggerated to say one great knife can serve you way longer and with more ease than an entire knife block set, so hope you can find yours here! I'm a huge fan of getting their sayas/wooden sheaths sized to each knife I have, which will protect it in drawers - but you can also get one for a knife you already own if you bring it in! Other services include knife sharpening - can drop off and come back to pick up at a later time. Store has a decent selection of other kitchen tools and apparel, as well as hunting knives. If you get super into the practice, they also sell whetstones for you to sharpen at home. As a guy who loves to cook, places like Phoenix Knife House are like kid-in-a-candy-store level hype for me. But whether your mom needs to sharpen or replace one of her knives, or you need a decent housewarming gift, this is a great place to check out. read more

This store is a chef's dream. They have a wide variety of knives in different price ranges, as well as clothing and knife rolls. My knives were getting dull past the point where honing them would do any good, and I had never tried to sharpen them myself. Since prices were so reasonable ($10 per knife) I decided to head on over to let the professionals work their magic on my 6 inch santonku and 8 inch chef's knife. The gentleman in charge of sharpening was great at providing information on how to maintain my knives in better condition and I got to see some of their best stock of chef's knives. If I ever want to upgrade I know where to go! He was very cool and it was great picking his brain for great tips on how to sharpen my knives on my own and to learn about the differences between the knives they had in stock. Their turnaround time is typically 24 hours. When I came to pick up my knives they were securely packaged in a paper bag and I was on my way to dice and brunoise to my heart's content. If you are in need of a good quality knife or need to have your knives expertly sharpened, this is the place to go. I drive all the way from Fountain Hills to drop my knives off here and drive back again to pick them up when they are ready. They are the only people I let sharpen my knives. As I noted before, they are also a great place to go if you want to purchase a high quality knife. Recently I was looking for a good 8" Japanese Damascus Steel chef's knife. This review is years overdue. I forget Yelp is for businesses beyond restaurants at times. I'm obsessed with the Phoenix Knife House. I need to go there every once in a while just to hang out (and I always have to buy something). I've bought many a present here and I'm always itching to buy another knife for the house. Phoenix Knife House carries Japanese chef's knifes - which are only sharpened on one side. They're ridiculously sharp and so cool. We have a killer set of Wusthof's that we got for a wedding present that we don't really use anymore. And we just have a few knives from PKH. While we don't need anymore really, I have to get another soon. I'm going for the Sugimoto 8" chef's knife. While they have some amazing, high end works of art (Damascus steel & such), they also carry a good selection of great knives that are super affordable. Eytan, the owner, carries knives in typical Western shape and traditional Japanese form. He also has a bunch of killer kitchen tools. Absolutely love the kitchen shears he told us to get long ago and was excited to pick up a nice fish spatula recently. This happens to be the place where many of the valley's local chefs do their knife shopping. Eytan has also expanded to carry some additional chef supplies so head over there if you need a chef's coat or clogs as well. In addition to being an authority on knives, he's a master sharpener. He sharpens all kinds of knives, is super reasonable and has a quick turnaround. In addition to the awesome product he has, Eytan is a major foodie. He is a former chef (SCI grad I think?) who worked at amazing places like Kai, Circa 1900, opened Fiamma here and did time in New York at spots like Aureole, La Côte Basque, and Craft. He is also a great guy and a wealth of information on the local food scene. I'm always following up on his recommendations. Even if you have nice knives, you should check it out. I brought two knives here to be sharpened/refurbished. One was my 25 year old JA Henkel chef knife. I had pretty much ruined it by trying to whack a t-bone in half. It was badly damaged and un usable. They were able to grind it down some and now it looks brand new again. The second was an old butcher's cleaver. It had an edge on it already but the pros at Phoenix Knife House were able to thin out the edge just a little and put a super sharpness on it. This monster is going to cut just like a kitchen knife. I brought my EDC pocket knife in to them because I rolled the edge on the blade. The knife needed a new edge put on it to fix the portion that had came off. I dropped it off and 48 hours later picked it up. They did an amazing job at fixing the problem and putting a hair popping sharp edge back on the blade. He's also a master sharpener - I advise taking his knife sharpening class if you want to maintain your own blades.
