When the gentlemen came out with my knife (less than 10 mins later), he explained to me that it was made of some really hard, high carbon steel and what he did to sharpen it. I even bought a knife sharpener where you drag the blade through the metal cross. Nothing! I thought well I'll just buy a wet stone and make a new edge. I looked up videos and was like yeah right there's no way I'm gonna be able to find the time to get it how I want. I really thought it might be a long shot to find someone that would sharpen the set. Sure enough I found P.J. and man he did a great job. He's a craftsman a perfectionist and has a passion for sharpening. He was able to pick up the knives and bring them to me when he was done. It only took a day. He said the blades never had an edge on them. In fact he says he's noticed a lot of sets don't come sharp anymore. All the more reason to call him if you're tired of your eyes watering when cutting an onion. I no longer have that problem. I chop through an onion with ease.
