Pork Ribs // "Pasta" Salad [side of the day] // White Trash Potato Salad

Welcome to what I can only describe as a car crash in terms of food quality. With all due respect, you guys are nice people, but I have to say what I have to say. I have to write this review, as I do with every establishment I visit. I want to start with the main focal point of this car crash, the ribs. In terms of flavour, they were heavy on the black pepper in terms of seasoning. In terms of overall form, they were a little tough in a lot of ways and upon diving into them further, I found mine to be actually somewhat raw. Definitely undercooked in some areas, as I saw a lot of pink that just shouldn't have been there. Very uneventful and undercooked ribs. I also have a very strong hunch that their choice of meat is also low grade due to how much fat I saw compared to what I'm used to seeing in real barbecue. Thankfully, nothing made me sick. The choice of sauces for the ribs were also very subpar and offered very little. The red pepper vinegar sauce was disgusting. Onto the sides. Let's start with the "pasta" salad. First off, this is the first time in my life that I have ever seen this kind of "pasta" salad. The flavours were weird and somehow annoying. There was just nothing there. The White Trash Potato Salad was weird as well, but not to the degree of the "pasta" salad. Unfortunately, the only flavour I got from this particular potato salad was from the bacon bits and that's just embarrassing. I don't have a picture of my third side, but it was the beans and these beans were strange in their own way, much like every other side that was on offer. My issues with these beans is that they were simply way too bitter and way too earthy. It was annoyingly overbearing. One small and final gripe that I have is that your staff were less than half-assing it when it came to bussing tables. Getting a dry paper towel and just wiping the crumbs off onto the floor doesn't cut it for sanitation in the food service industry. Disinfect every table after every guest. I loved the ambiance, the canned Coca-Cola, and even the banana dessert that I was just randomly offered. It was just decent, but in terms of the food, the best thing I tasted there and it tasted like it was made with a few premade store bought ingredients. Shoutout to the piece of bread on my tray. The little guy really tried, but the burden was too great to bare. Phat Tabb's, get it together, or forget it forever. This was the worst barbecue experience I've had in my entire life.

This place is The potato salad for a side was delicious. Was thinking about the ribs but glad I went for the brisket. Juicy, super flavorful, and a GENEROUS portion. The price was very reasonable and the atmosphere was relaxed and entertaining. I'd drive out of my way to have bbq here again. The guy at the counter was kind and made the meal great. I'd definitely go back.

There's a review of Phat Tabb's that was posted from the day before we went that was two stars. Their experience and mine were polar opposites, I almost wondered if they were in the same place I went to. We agreed on loving the ambiance, but that's about it. I'm very particular and judgy when it comes to BBQ. We've eaten at most of the top places in Texas, and I have to say the meats at Phat Tabb's is up there with the best of them. We were headed to Broken Bow for the weekend and decided to take a slight detour over for lunch - what a wise choice for us to make. The line was about three orders deep in the small place, so not a long wait and plenty places to sit. We decided to share a three meat plate - brisket, sausage and one of the specials spicy taco sausage. Sides we chose were beans and white trash potato salad. Being a totally picky brisket snob, we were pleasantly surprised at how delicious it was. Nice peppery bark, tender and perfectly smoked!!! The turkey was sooooooo juicy and delicious, and the taco sausage was so flavorful and delicious!! Not all places can get flavors and textures right on a variety of meats - this place is spot on. The beans were fantastic - I could have made a meal out of them alone!! The white trash potato salad was different from any I have ever had, and I liked it. I think some folks get their momma's recipe stuck in their head and don't open their minds to new things. Too bad - that'll keep you from enjoying new adventures!! I wanted to try the bbq sauce and did on my turkey, but frankly, the meat stands on its own. The sauce was so good, I ended up eating it with some of my bread. It's also different and just fantastic. The pickled red onions and pickles were a nice touch as well!! I fought with myself about dessert, and my husband didn't fight me on it, so it's his fault I got the mini chocolate pie. Yes, the little crust was store bought, which is delicious in its own right, but the filling? Tasted much like my grandma's chocolate pie filling did. It was that thick, homemade, chocolate wonder that I grew up loving. It had a dollop of whipped cream on top. Such a wonderful finale to our meal!! The staff was amazing. They were friendly, came and checked on us, and seemed as though they enjoyed working together. One of the folks was joyfully singing along and harmonizing with some of the music they had going. I absolutely love that. Husband went out to check out the smokers and had a good visit with the owner, and even learned what made the BBQ sauce so good - but I won't tell. :) Idabel is about 2-2.5 hours from me. It's seriously worth the drive just to go have a meal. Whether it's on our way to a weekend away, or we decide to just go for a long and scenic drive to lunch, we'll be back to Phat Tabb's for sure. Idabel, you are one lucky town.

My girlfriend and I are frequent visitors to the Broken Bow, OK area, and are members of a few Facebook interest groups related to the scene. This place has had a pretty prominent presence in those groups, and since the pictures looked good, the pitmaster has some good provenance, and I love me some good BBQ, we decided to stop by on our latest trip, and wow, are we glad we did. The building is modest in size, but has dine in, carry out, a drive through, and even a few tables for outside dining (which we chose). The menu is fairly standard Texas style BBQ fare, and being quite familiar with good Texas BBQ, I selected the three meat platter with fatty brisket, ribs, and cheddar jalapeno sausage. For the sides, we opted for the "white trash potato salad" and pinto beans; the latter being a fairly standard but tasty cup, with chunks of brisket, and the former being kind of a mashed and chilled loaded baked potato. Both sides were quite good. But what of the meats? The sausage was the weakest of the meats, but don't let that disappoint. It was tasty enough, with a strong cheddar cheese presence and a nice kick. However, I hoped for a looser and more coarse grind, and the casing was a little tough. Flavorwise, though, it was a winner. Next up was the pork ribs. I've eaten a lot of Texas BBQ pork ribs, and have experienced the agony, the ecstasy, and everything in between. These were, in a word, superb. They were perfect in every way, a word I don't use lightly. The texture was "comes off of the bone with a gentle tug", and not the overcooked "falling off of the bone" variety. Smoke flavor was strong and delicious, the meat had great seasoning with a slightly sweet but not "fussy" rub, a great bark, and a wonderful tender texture. Truly some of the best ribs I've had anywhere. Finally, the brisket. Our big slab of the combined point and flat could have had a bit more of its fat rendered out, but this is a VERY minor nit. The brisket was phenomenal. Enrobed in a beautiful bark with a perfectly seasoned rub, the meat was very tender, super moist, and had a wonderful smoke throughout. I'm not sure of pitmaster Tabb Singleton's BBQ roots or training, but this is the stuff dreams are made of. Like the ribs, this is absolutely first class brisket, and could stand beside the Texas greats with its head held high. If you live in this area, you simply must try this place. If you're going to be in the Broken Bow/Beaver's Bend/Hochatown area, it's well worth the drive, I promise. Just be careful to check the hours of operation; as of this writing, it's only open on Wednesday through Saturday. Again, it's well worth it.

I saw a holy smokes had higher reviews, and was in the area but it didn't exist so I backtracked to this place I was originally going to stop in on my way from Houston to fort Smith Arkansas... I'm so glad I had turned around and stopped here! This is some of the best barbecue I have ever had anywhere. Easily comparable to Killen's in Houston which is considered one of the top spots in Texas for half the price. Going to try and stop on my way back for a second go around, Still trying to figure out how to justify going back there again someday.

I've been to Phat Tabb's twice now on separate visits to Idabel . Tabb is spot on with his food. The pastrami is amazing, the sides are all fantastic. If you're close by make a point to go there.

This is honestly the best BBQ I've ever had and I travel all over the country for a living. it's a must try if you're in the area.
