The meat was super tender, great smoke and kissed with a little bbq and those luscious caramelized onions. I decided on side of collard greens and mac 'n cheese. Hubby had the Texas Trinity which consisted of ribs, sliced brisket and sliced jalapeño cheese sausage link served with the best hush puppies and he decided on sides of collard greens and sweet potato casserole. Note, sorry the brisket was almost devoured before I could take the pic. Everything was seasoned to perfection! The brisket and jalapeño cheese sausage was the best he's had since leaving Texas in 2006; so good in fact that he ordered 2 additional links to go! It has a retro theme, which also makes you feel a bit cozy and makes you feel like you belong. If you are a regular, you will see people you know and will build connections with the waiters. It is truly a small family at College Barbecue. Their hotdogs are great, and haven't changed the recipe one bit. They are footlong hot dogs (just so you know), and typically come with crinkle cut fries. Their fries are crispy on the outside and soft on the inside, and always are great quality (not hard). They come lightly seasoned with salt, but there is seasoned salt in the restaurant for you to get up and grab. You know you're in Salisbury when they have a dedicated pitcher for Cheerwine, just like tea and water. If you are coming with the church crowd or are stopping in for Saturday lunch, expect a wait. Even though they have a small parking lot, parking it generally not an issue. They also have a drive-thru if you prefer that instead.

I always like hearing the sound of BBQ being chopped up while waiting on your meal to arrive. My plate had plenty of that good outside brown Q and some good smoked flavor. The baked beans were hot and we both thought had a good flavor. Now naturally my wife stole a hush puppy as soon as our waitress set the basket down. Hush puppies had a good taste and were fresh out of the fryer. Their house made dip was on our table and I poured it on my Q several times. I did notice it had a little bite to it. Good Q,Good Slaw, baked beans and the hush puppies were spot on. My wife's sliced sandwich had a very good amount of meat and slaw ratio. I happily finished the last two bites she couldn't manage to finish. They didn't have any pork skins on our visit. The waitress told us she liked them too.
