As a foodie, this by far was one of the most memorable things we saw/did while on our 3 week vacation in Italy. Make reservations online. This will be a "meal", so do not eat lunch or plan for dinner afterwards. You will be full! There is plenty of wine offered (as well as water). After putting our belongings on hangers, we put our aprons on and introduced ourselves to everyone. Then we sat at the Chef's counter, poured ourselves wine/water and watched our masterful Chef Marco prepare the long simmering sauce first. Then while that cooked, we moved onto the pasta table where he showed us how to make (and we made) pasta and then 4 types of pasta shapes. Ever so patient, funny, witty and generous, Chef Marco gave each person his personal attention. Once we were done with the pasta shapes, we went back to the Chef's counter. There, Chef Marco explained how pasta should be cooked and how important it is to add the salted pasta water to the sauce. We all devoured the first dish. Then Chef Marco continued on with 3 more pasta sauces, easier quick ones, and asked for a volunteer to help with each one.
