You can truly tell the tacos were made with love. Not only did they look amazing, but the flavor was absolutely impeccable. I'm normally the type to take a picture before eating, but these didn't stand a chance -- I devoured the tacos before I could even think about grabbing my phone. Topped with cotija, lettuce, crema, purple cabbage. Again, crispy shells, tasty filling. Really can't go wrong. They also had a potato version if you're meat-averse. Ask for a few sauce containers (small) and fill them up with the self-serve sauce station. Light green is milder, more tart but still has some heat, while the darker sauce has a richer, smokier flavor and was noted to be the spiciest of the options. I wanted to try the shrimp gobernador, but unfortunately, the guy at the window said he didn't know how to make them? I thought Birria was overhyped until I gave it another try here at Papis Birria truck! They have been coming recently at the Gasoline Depot where the 7/11 is. I tried their rolled tacos and queso birria tacos. They do beef here because I know some places do goat, which I do not prefer. The consummé is amazing and I wish they gave a little more in the sauce cups but I loved it! The rolled tacos are filled with that shredded beef as well and topped with lots of shredded lettuce, cream, and cotija cheese. Can't really go wrong with rolled tacos in general but these hit the spot. Definitely do not overlook this truck! The fries were loaded and I was happy with the amount of stuff put on them. They were pretty salty too so I'd recommend having plenty of water with these haha. The guy I talked to was super nice and we got the food fast after ordering. The only thing is there were actually no prices written on the menu. The 2 tacos and fries came out to $37 and even though I kind of expected that with there being no posted prices I was still a little shook lol. Had the chance to visit this food truck last night I've got regular fries and my friends each got quesadilla burrita and was charged 45$ gave him 5$ in cash and still charged my card 44 something. This is the worst experience I've ever had with a food truck. They came to my large apartment complex. I walked all the way down to where they were at which isn't close to my apartment. I ordered and he said sorry we are all out of birria. They were supposed to be here until 5 pm but it was only 2:30. He said they only made one pot so that is poor planning. The guy in the truck said if you come back at 3:30 I promise not only will it be ready I will give you a free extra quesabirria. I came all the way back down at 3:30. We said it was fine and went back after 30 minutes then he asked us to wait 20 more minutes. I honestly did not mind the wait since it was just him but for the order not to be made how we wanted it was disappointing. We specifically said NO cheese and we got cheese on the Birria tacos and adobada. I am not a fan at all. The Al pastor was not very good, the Birria was but the sauce on it tasted like chili/bbq it was just odd. I would like to give them another shot without cheese and without the salsa on any taco since the service was nice but maybe too much in a hurry.
