A bit of a splurge but worth it when in Madrid and in the mood for a steak. Located a few blocks…read moreeast of Puerta del Sol, it's nice because there are no hordes of people you have to navigate to find it. This is a place for people who appreciate their food and the experience, not for the tourist masses that are looking to get fed quick and cheap. It is an interesting set up as they have dining rooms on both sides of the street. I was in the one on the east side of the street and taken downstairs into the basement which has the looks of a refurbished ancient cellar. I had a 2 top in the corner to myself with a great view of the room so I could appreciate what everyone else was eating. I had a very civilized time. Frenetic Tapas this is not. There are white linen tablecloths present, a small container of housemade chimichurri, menus on line, great wi-fi service, a full bar and wine list, and menus that are bovine centric. I had an Argentine Negroni (the Argentine nod is due to a splash of Fernet Branca giving it a slight minty taste on the back end) and a glass of affordable, high ranking Tempranillo. These were perfect with the olive and bread starters with EVOO/Spanish vinegar on the table to mix to taste and also served with compounded butter. I was there to eat and the Mollejas (veal sweetbreads) are a must in my opinion. They are listed as a house specialty and come on a charcoal heated sizzle plate served with a side of broad flaked sea salt to finish to taste. Crispy edges and creamy textures throughout with a hit of grilled lemon and they were simply sublime. I also took down an Entraña (skirt steak) that seemed larger than its described 300 grams. Also served on a sizzle plate it was perfectly cooked by some expert grill guys upstairs. To ensure that I ate something with color, I had a salad on the side that I dressed to taste with the EVOO/Spanish vinegar on the table. The service here is friendly, professional, and not overbearing. My meal was about $85 USD which is pricey by typical Madrid eating standards but it was worth it considering the quality, quantity, and variety of what I experienced. I would be happy to go back here again any time I'm in the area!

It took about twenty minutes to order because the waitress was "busy", she took a phone call, went downstairs, and gave some people their checks before even saying hi to us. Once we finally ordered we sat there, and sat there and sat there some more. eventually we got some chips and bread and cheese. Then we continued to sit there. About 30 minutes had passed and my dad was starting to get angry. He asked the waiter where our salad was and the waiter looked so puzzled, "what salad?" she asked in response. He said "caesar salad" and the woman was very confused, he said it again, "caesar salad" he then pointed at the menu. "Oh, Sesar salad" the women responded. My dad was like "you say tomato I say tomatoe, but we are starving." Our salad arrived like 8 minutes later, it was fine not special but at-least we weren't starving to death. We got this tapas dish and we were scared because we thought it was what my dad had order for his meal. The tapas were good and we later found out they were because I guess they felt bad. It is has been about an hour since we arrived now and haven't gotten our steaks. We got our steaks at 10:15 and we walked in the door at 9:20. They steaks were cooked as order and tasted fine but we weren't hungry anymore. We finished eating and got our check. The Tapas were free and that was nice but the experience as a whole was kinda crappy. The woman had the Audacity to argue with us about how long it took. Really. I wouldn't recommend this place to anyone with a watch.

Para dos personas te incluye la mesa buffet, carne (all you can eat) no top of the line, una botella de vino, dos empanadas, café y postre para dos personas por un poco menos de 70 euros en fin de semana pienso que es OK. Ahhh.... Pero el flan espectacular lo que quizás le falte en carne les sobra en el flan. Muy bueno!!!!!!!

We arrived early (8:30) and had the place mostly to ourselves. The cold bar is delicious, with lots of choices of salads, fruits, olives, all kinds of good stuff. But don't fill up there (unless you're a vegetarian) because MEAT is the word here! (OK, actually, it's carne, but you get the idea.) Everything we had from the chefs was delicious. Black sausage, Argentinian sausage, steak, chicken wrapped in bacon, even the grilled veggies were amazing. The prix fix is very reasonable. My only complaint was that we didn't know we could order tinto verano instead of bottled wine. That would have been better (the wine was good, but it was hot, and we could have used something lighter.) But I won't take points for that. All told, the Knife was perfect! 5 smokey grilled stars!

The reservation system is easy to use, and reach out to them if there does not appear to be any bookings available. The staff is friendly and helpful, even offering suggestions despite my very poor Spanish grammar when asking. The last two visits I've been fortunate to be seated next to the kitchen for a front row view of the magic. They have a wood-fired oven, and the artichokes may be one of the best things I have ever eaten. I normally order the grilled chicken breast and my bf had one of the best steaks of his life here. The bread is freshly baked and so, so good. While I have not tried any of the desserts, they bring out a dark chocolate truffle after the meal that is the perfect ending.

Service was friendly and efficient (and spoke English which helped overcome my very poor Spanish). The server recommended the cheesecake for desert, and I almost passed because, well, cheesecake, but holy hell, it was amazing. Oozing with fresh ricotta and served with a dose of Amaretto to pour over, it was simply spectacular. Met the chef and her team and they couldn't have been nicer. Easily one of our best meals in Madrid. Go!!
