Monday night and the restaurant was packed. For good reason. With seamless service, comfortable surroundings, and beautifully conceived, and executed dishes, we had a dining experience of the highest order. We started with octopus. Four baby octopi over an anchovy brown sauce, ensured that each bite was tender, with hints of salt, and heat in the gravy. Somehow the intense anchovy flavor was harnessed, so that it complemented, rather than competed with the delicate octopus flavor. On to the paccheri pasta, with crystal bay prawns, in a sorrel sauce. Home made al dente pasta, with a delicate sauce that supported the small, flavorful prawns. Our last main was the duck. Exquisitely tender, with crunchy roasted hazelnuts, bitter cooked radicchio, in a duck sauce. I was happy that they did not take the easy way out, with one of those over used, overly sweet fruit sauces. This dish was for mature palates, and married beautifully to our Pinot noir. We concluded with chocolate cake. The dish was deconstructed so that little bites of cake sat alongside bites of chocolate mousse, chocolate ganache, various fruits, strips of tarragon, and then covered in a blanket of very thin persimmon slices. Again bitter notes were emphasized over sweet ones, leaving one with a more complex dessert than any chocolate cake you have had before. Embrace the vision of this restaurant, and you will be well rewarded.

My husband ordered the swordfish which was also cooked just right, medium. We ordered a side of potatoes to go with our meal. To start we ordered asparagus. The preparation was delightful with the glaze and sauce evenly spread across all of the 6 asparagus. They had been cooked and chilled to the ideal texture for asparagus - not too soft and not too crunchy. We were assisted by Hannah, one of the sommeliers at the restaurant, to select an Australian wine to go with our meals. We were not disappointed in her recommendation. We our only disappointed in our inability to remember the name of the wine. Hannah also suggested when we were in Hobart to visit Sullivan's Cove Distillery for Whisky. This suggestion was even better than her wine recommendation. Now I could carry on reviewing the meals my husband and I had, but I won't. They were both equally delicious with impeccable presentation. The pace of the meal was such to allow for digestion and that is a welcome change from being in the States. The wait staff was all equally pleasant for a restaurant of this stature being in the base of The Crown Promenade Melbourne and at the higher end of the price point spectrum.

Here's what we noticed: - It was difficult to get a reservation at prime dinner hour, so we opted for a 3:30 PM late lunch/early dinner which worked out perfectly for our schedule. - The place overall has a great vibe, good music, and it is pretty small. - There were some really interesting drinks and good wines to choose from...we went with wine since we had other plans later that evening. - We decided to start with the salad with pear and honey, and then my wife and I split both the black squid ink pasta, and the special pasta that had Moreton Bay Bugs. The salad was incredible perfectly dressed... Having it first gave us away as Americans for sure, but it was perfect. The squid ink pasta was every bit as good as everyone said in reviews, and so was the special pasta. - Service was great, not overbearing. They even brought us some extra bread so we could sop up the sauce from our pasta. Bottom line: There are so many great restaurants in Melbourne and Tipo 00 is right up there and should be on your "to try list".
