Great little place with an unexpected menu. The building appears to be a Waffle House transformed. We were on a girls trip and needed a stop on the way home. We walked in at 2:00pm on Sunday (an hour before closing) and we were the only ones there. The carb selections looked absolutely amazing. They made all of our keto accommodations. From the looks, you can immediately tell it's an old Waffle House from the outside. Once you walk in, definitely an old Waffle House. However, the vibe is totally unique. Nova is a fitting name. The menu is "nerdy" and the taste is explosive. We tried their Avocado Coffee. Yes. Avocado Coffee. Very inventive, especially for Pineville. There are so many amazing menu items that's creatively named (Sorry I was so caught up and being super early. I forgot to take pics except for the one site pic after the rush has cleared before another rush of people about to walk in as we were walking out). There were four of us and every plate was uniquely named and scrumptious. We aren't from here, so we are definitely surprised to experience this "big city" experience in a small town. Staff and service were amazing. The owner even came by to talk to us. Place might remind us of old Waffle House but it smells clean and looks clean. It's CLEAN. If you live within 30 mins of driving...Or even an hour.... Definitely worth a drive to come here to support great local small business owners and expect to be blown away with the creativity and deliciousness!!!! read more

I'm fairly picky, but the chicken and waffles here were 10/10 perfection. Really great place with fantastic food.

Arrived a little after 8 AM on a Friday morning. No customers were there yet, but that quickly changed. My server was fast and my coffee always full. I ordered something simple for my first time--scrambled eggs with cheese, grits, bacon, and a pancake. Within three minutes, my meal was under my nose, piping hot and fresh. The scrambled eggs were beyond perfection, the bacon crispy, but not too crispy, the grits were delicious, and the pancake was soft, crispy at the edges and dusted with a light powdered sugar. Everything was delicious! My only very minor complaint was that the maple syrup was served in a mason jar with a spout at the top. Because it did not have a secondary hole, the syrup came out extremely slowly. But that's only a trivial nit to pick. Nova's is a step above. Built from a former Waffle House , it transcends the breakfast diner into something special and memorable. read more

I ordered pancakes and what the menu described as "Country Ham" was actually just regular ham and a small glass of milk. When I tried to explain to maybe one of the owners exactly what Country ham was, she was just dismissive. The 3 pancakes were about 5" in diameter and the bottom of them was black, of which I didn't discover until I turned the third cake over. I kept tasting something I couldn't put my finger on until I had eaten two of them and flipped the last pancake over to reveal its burnt black color. I left the 3rd pancake on the plate so they could see it. I was charged $12 for just the 3 small pancakes (I was not charged for the ham). The small glass of milk was $4 plus tax, minus a military discount, the total was $15.10!!! I really felt violated! I could have gotten waaay better pancakes at Whattaburger. I did leave a 25% tip, not because of the waitress, but because I'm a generous tipper in general. Needless to say, I won't see the inside of NOVA again! read more

The cutest old Waffle House made modern. The food variety & selection is SO good! I try to eat clean so seeing the option for avocado toast & yogurt & fruit parfait was so pleasant. I also love the size portions of the dishes, we had PLENTY! Totally could've shared but everything was delicious & flavorful. They were very quick. We had a very sweet & attentive waitress. Small town restaurant but city vibes. We loved it! It's a great staple to the area. Pineville is much nicer than Alexandria for sure. read more

Went this morning with some friends. Husband had a traditional breakfast plate, eggs, hash browns and bacon. I had à la cart bacon and waffles. Our friends had the Benny BLT and Shrimp and grits. The friend commented that the grits were a little too cheesy but other than that I think everyone was pleased. I loved the crispy outsides of the waffles ! Went to Nova's for lunch with my 93-year-old mother on her birthday. Everyone was so sweet to her with birthday wishes and hugs! The food was delicious! Such a variety of unique dishes on the menu that it was hard to decide. Besides the breakfast choices, they have specialty burgers, shrimp and grits, and other dishes suitable for brunch or lunch.
