Far from authentic, but they boast a variety of Japanese, Vietnamese, Taiwanese and other Asian cuisines, from ramen, to pho, to bao, etc., with plenty of vegan options. And it's located across the street from Bamberg hauptbahnhof (central station).
I ordered some summer rolls (€5.20 or so) to start and a vegan Pho Chua (€12.90) as a main, that features a tamarind lemongrass broth. It took quite a while for even the rolls to be brought out: close to half an hour. But it turns out, it was worth the wait.
The summer rolls were very nicely made, with fried tofu, shredded veggies, noodles, and served with a rich peanut dipping sauce. The pho was more like a tom yum noodle soup with all that tamarind and lemongrass. The broth was tangy, tomatoey and quick rich yet balanced. It came with plenty of tofu, seitan, mixed mushrooms (button, seafood), carrot, and medium-width rice noodles. Very satisfying.
