Ladies and gents, welcome to a five star food truck…read more The best way to describe my feelings for the Chanchito pork belly sandwich is to tell you that only a few days after returning home, I found myself in the kitchen trying to replicate it after having scoped out Aji Amarillo paste and researching salsa criolla recipes. The Chanchito is like nothing I have had before, and nothing like I would have thought to combine: sweet potato on a sandwich? But it works. It really really works.
