It is impressively tasty as is, and when you consider they only use local ingredients, it is even more impressive. I really liked: - The starting amuse bouches: in particular, there was one with uni and local cornmeal that was outstanding. Another with trout and salmon on a puff filled with beef was also quite good. - All of the mole courses: there was one with suckling pig that was really, really tasty - the wagyu cross asada: this was perfectly reverse seared and the outer crust was delicious - The "Silencio" dessert: the contrast in texture with the liquid nitrogen ice cream and the yogurt was delightful. The honey it sat upon was also delightful and a great complement to the yogurt tartness.

We got the fried cauliflower, the arranchera (strip steak), the suckling pig (as tacos), and the creme brûlée flan. The steak was deliciously marbled, and cooked to perfection. It melted a bit on the tongue. The suckling pig tacos were dynamite. The meat was tender, and topped with a crispy piece of chicharron. The presentation was impeccable. The flan was also really tasty, and made for a light, sweet, and to a delicious meal.
