Backcountry Catering - Charcuterie board by Chef Jeff.

    Backcountry Catering

Holy moly melted matzo balls, these folks are on point…read more I have bartended and served at many weddings spanning the better part of a decade. As an employee of the Harvard Club in Boston (yeah the club is in Boston not Cambridge- weird I know) and Guastavino's in Manhattan, I've learned that 90% or more of what wedding guests are served is commercially prepared frozen food. Backcountry Catering proved to me there's a better way. Last week I got the chance to meet the proprietors of Backcountry Catering, Stef and Jeff, at their commercial kitchen in Norwood and prep for a party of 200 guests. Sure mashing potatoes isn't a glamorous job, but watching these masters at work was a sight to behold. What stood out to me the most was witnessing them painstakingly prep everything from chives to grilling the mains for days on end. While their own wedding is just weeks away they treated this event as if it was their own; putting their own needs on the back burner. When we finally did break for dinner at 9:30 pm, my taste buds were treated to ravioli served with a sage brown butter sauce that was to die for. Each station is held to a higher standard in the kitchen than I have ever witnessed in any commercial kitchen. Germaphobes rejoice, they are as particular as you! Their mobile kitchen is awe-inspiring- including a wood-fired Chicago brick pizza oven, an Ole Hickory CTO smoker, two commercial deep fryers, a 36-inch flat top griddle, a 24-inch charbroiler, a 6 burner stove and oven, and a customizable 50-inch full digital display. As a perpetually hungry person, I've seen a lot of food trucks and mobile kitchens over the years- none of them hold a candle to this bad boy. Chef Jeff has also won the title of Telluride's Top Chef four years in a row. I think it's safe to say you need to look no further than Backcountry catering for your next event.

It is also attached to the Camel's Garden Hotel so a convenient location. The bartenders, cashiers and other staff seamed friendly. They were in and out delivering food and cleaning up after everyone quickly. Drinks came quickly and were nice pours. For food, we ordered the steak fries, very good. Crispy outside, tender inside. Nachos were also very tasty. Real cheese not the sauce type fake cheese. Good toppings. The pork sandwich was a little dry and needed seasoning and sauce. The burger was a little dry as well, not cooked to order and the bun was dry and fell apart. But it came with all the toppings. Inside the restaurant were several families. Packed! Kids running around everywhere. It was way too chaotic for us personally so we sat outside. The patio was busy every afternoon with people and pups alike. I was sad to see so many people leave their dogs outside on the patio unattended, barking and whining looking for their person while they are inside drinking and dining. This happened every day so it seams normal. Telluride is a very dog friendly town. Overall good for after ski atmosphere. There seamed to always be some activity happening outside to watch or participate.

The staff is on it to keep your pint full, but it still can get busy during the prime hours. Many folks still hit it up for linner and apres, if that is of interest.

When we dirt entered we were greeted by the hostess and the sweet owner, Chef Eliza. She asked if it was our first time, after stating it was, she immediately told us how grateful she was that we were there. We were seated immediately and offered drinks from their fun drink menu. Nice wine list and their holiday cocktail was delish! Chef Eliza also came to our table to chat with us. She is so kind and friendly. She also brought us an amazing Shaved Brussel Sprout with Pecan Bacon & Apple Dijon, Apple Cider Vinaigrette, Focaccia- Brie and blue cheese... oh. my. Tastebuds! My husband is "not" a fan or Brussels or blue cheese. I had to fight him off for my fair share! Raving review from him. Entrees: Braised Bison Short Rib with Squash Purée and Salsa Verde Squash Relish, Parsnip & Candied Pink Peppercorn Wagyu Flat Iron Steak with Black Garlic Jus & Peri Peri Potato Pavé, Oyster Mushroom, Pickled Celeriac and Crispy Smoked Potato Skin BOTH ABSOLUTELY AMAZING! The flavors were blended so well for each thoughtful dish. We are at several top recommended restaurants over the 4 days we were here. This beautiful restaurant was hands down the best!!
