As someone who's studying mixology on a more frequent basis, I had a great amount of respect for the bar program at Rex. Take a peek at the glorious bar stocked with spirits old and new.
My first drink was the Old Pal, think a Manhattan sub dry vermouth for sweet vermouth. This innovative twist on the classic cocktail was delicious. Served straight up, I absolutely loved the flavor profiles and appreciated the balanced proportions.
After that, I stuck with Ron Swanson's personal preference, Lagavulin neat. Hell, I was on vacation and wanted some single malt Scotch! Bartenders were equipped and professional, although not ones to invade our space.
We chatted for hours with a friend we made during our dinner at Pizza Man. The cool thing about Rex is that there are so many different options of night you can have. Going hard? Stand near the DJ and take shots of Fernet. Staying low key? Sip a cocktail while sitting in an intimate booth. Here the night is what you make it.
