It wasn't actually undercooked, but seemed like it was baked to just barely done, which I think was perfect. I imagine they have to balance cooking the cookie without overcooking the croissant. There's a thin, flat layer of croissant pastry that is a little denser than the flaky outside and almost has the texture of pie crust, while still having that buttery croissant flavor. It made the whole thing feel almost like a cookie pie inside a croissant. Between the light crispy and flaky outside, the soft doughy cookie center and that slightly denser buttery pastry layer underneath, you get all these different textures in the same bite. It's such a cool combination and genuinely delicious. 10/10, I would absolutely get it again. I'm already back in New Mexico and genuinely wish I had another one!
