Tucked away in a corner on Borgo Del Carbone, this restaurant is a small gem in Parma run by chef Jean Pierre Pastor. In a city where food is an art I recommend stopping by and enjoying a full meal here. I peaked in early while the staff was getting ready for service to try and get a reservation; i was greeted by friendly smiling faces that set us up for an 8:30 p.m. table. We sat outside at an elegant table and our dinner began with smiles and a great local white wine. My appetizer was small scallops on purée of purple potato, cubed foie gras with a basil vanilla oil. My wife had roasted squid tentacles with arrabbiata sauce, burrata cheese drizzled with olive oil.
For our primo i had black fermented garlic pappardelle with shrimp tartare, mullet bottarga and pistachio crumbles. My wife had a great plate of gnocchi with clams, flavored with zucchini flower, lemon and pepper.
The secondo was a simple but great dish of fried calamari and shrimp with a tarragon based dipping sauce. My wife had prawns al Vermentino with a snapper reduction on a bed of slivered vegetables.
We shared crunchy mascarpone cannoli dusted with cinnamon, drizzled with a pistachio chocolate sauce and meringhe crumbles for desert. We started at 8:30 and ended at 11:00 p.m. so please don't be in a rush. Enjoy! read more
