Here you have excellent hand-pulled noodles, a savory broth, fresh ingredients (Paris, bien sur) in a simple, spartan setting, signs limiting cred card use to 10 Euro or more, and a warning that 20 centimes is levied for every extra cup of sauce you require. Here is where I eat in Paris when I feel overwhelmed by the gourmand universe, the quick-slow, the charcuterie, the crepe and cidre, all that make Paris indigestable on occasion, like ar least once a week.
