If you are an American tourist with a couple hundred euros to spend on a delicious, authentic five-course gourmet French dinner, you are far more likely to gain something from what I'm about to say.
Restaurant Stéphane Derbord is a treat for the senses. I'll start with the wine. As one Yelper already commented, the wine list is extensive. I ordered a 1999 Chardonnay for about 75 euros. Expensive? Yes. Worth it? Completely. It bears repeating that this is not a bargain hunter's establishment.
I could describe in detail the sensational appetizers, entrees, cheeses, and desserts we enjoyed, but I'd rather advocate for the overall experience and allow your taste buds to do the talking if ever you dine here. It is foolish (and impossible) to rush through your meal. Take a page from the French and "seet back and enjoie zeh whole sing." Sip your wine slowly. Take time to admire the artistry of everything that arrives at your table before you begin eating. When the waiter rolls out a cart covered in every kind of cheese imaginable, don't pick just one to try - pick ten, and cogitate as you chew. Be delicate with your dessert and give your stomach time to digest.
For a main course, I recommend the duck, though I would be doing le chef a disservice by recommending anything at the expense of anything else. Every dish is lovingly made and French to the core, so don't be afraid to explore. I also recommend requesting a sampler platter for dessert. It's not on the menu, but the waiter ought to oblige. From the dainty macaroons to the beautiful cake sculptures, the platter is a sweet, rapturous journey to oh-la-la-land. You'll find yourself reluctant to spoil the food because of how pretty it is, but spoil it you will, and the decimation will be well worth it. Just before you enter into somnolent bliss, clear your palate with a couple of after-dinner drinks and a cup of coffee.
