We entered without a reservation and were seated at the bar. Boy, were we glad we did! We got to watch the careful preparation of each meal and ask questions about the ingredients, all of which were sourced from small farms/producers (for example, the farmer who grew the pointed cabbage is named Marcelo). The menu changes each Tuesday based on what ingredients they can source. On the menu, the options are green (vegetarian, not vegan), green with fish, and meat. We enjoyed a perfectly prepared 7-course meal of the green with fish, and added a flight of wine pairings. I enjoyed every bite and every sip, and the staff were extremely friendly and welcoming.
