Ambience was lovely and although the place was full it wasn't noisy, but atmospheric. Now the establishment offers a combination of fine wines, real ales and excellent food all served in a really relaxed and comfortable atmosphere. When I ate there I had the pork belly with Calvados gravy and it was excellent. They grow their own vegetables in the garden so you can really taste the difference. However, it has now been taken over by the infamous Marco Pierre White and it has been given a new lease of life. He has followed the same format as at the namesake restaurant based in London and he seems to have hit on a winning formula. The menu specialises on British classics lifted a notch or two. The starters are mainly terrines and potted dishes which are all delicious, and on a previous occasion I sampled the cream of cauliflower soup which was devine. The main courses feature local lamb and pork dishes as well as the obligatory fish and chips. I went for the Romney salt marsh lamb which was cooked rare and was completely melt in the mouth. For dessert I finished with a raspberry soufflé which was bursting from it's dish. They really have hit the nail on the head with the food. Unfortunately, there were a few negatives which prevent me giving them the full five stars. Firstly, we were left waiting at the reception desk for quite a while before we were seated, it then took them a long time to take our order, and we were half way through our starters before the wine arrived - a real no no in my mind. We went on a Friday night, and the menu is succinct but nicely put together. All starters are £5 and mains £12, except for the steak which has a supplement charge. For a while we were the only customers there (its a new place and we were early), and the service was attentive but not cloying. We were told that a few things on the menu were not available; always a plus to be told before you order them. The food was really very good, I had a creamy mushroom and bacon concoction on brioche, which was very well balanced and light. As a main, I had the plaice, which came with beans and a beurre blanc. The fish was possibly overcooked by about ten seconds, but this is really the only complaint I could make. The two other people I ate with had the pork belly and the steak, both seemed very happy. All the dishes were generously, but not unpleasantly, sized; and presented very delicately. The food was good and very reasonably priced. Nothing was mindblowing or wildly inventive, but it was very good food in a pleasant atmosphere, and nobody asked you to take out a loan to go there. I would definitely go again.
