Happily, someone immediately responded and gave me that night's location, Evan's Brewery in Corona. My drive to the Eastvale address would have been in vain. It's a rented commercial kitchen, not a store front or residence. They do not sell here. I am always on the hunt for a really good smoked brisket. Albert's smoked meats are beyond reproach. He is gifted, providing a product that is moist and delicious. The wood he uses for smoking is one I could never get tired of. I ordered brisket meat only, hoping for a few slices, forgoing the bread and sides in an effort to avoid all the carbs. So what I ended up with was only a small tinfoil packet of meat, well chopped. The Hubs ordered a pulled pork sandwich with Cole slaw and baked beans. It came with a small container of their bbq sauce, a very sweet version, on the side. Due to rain, Evans Brewery had graciously opened up their lobby to the Ochoas for setting up their operation. We had expected to bring our food straight home regardless, but there did happen to be a few places we could have plopped ourselves down and ate inside. Once home, we took a good look at what we had spent $42 for. These portions were certainly not intended for anyone who sports a large appetite. Fairly recent pictures of their menu indicated I would be purchasing a half pound of brisket. It was not, more likely around 5 oz. Mr. B's cole slaw and baked beans sides were unremarkable, and sadly, the bbq sauce was overly sweet. This left us with very mixed feelings. While I really loved my brisket meat, and Hubs also said he liked his pulled pork, the smaller servings stunned us, and the sides were unimpressive and meaningless in the scope of things. I figured we were paying close to $60/lb for our meat. I admire the energy and passion they have put into their business. But as nice and friendly as they were, the great tasting meats were not enough to draw us in, and the fact that they are relatively expensive for an informal, seating-less pop-up, left us feeling torn. Just my opinion, but would we patronize them again? Probably not.

Adonis, Sodany & Ashley were a warm welcoming family who pour their heart and souls into their masterpiece recipes. They came around to each guest checking in on them after their meal. So welcoming and friendly, good hearted people. The 16 hour smoked brisket has that perfect smoke ring with nice bark seasoning. Lemongrass beef skewers are a MUST! Whatever else you order add a skewer or three. The pulled pork was tender shreds of beautifully smoked meat. In the words of Jen the sides are perfect to balance all the richness. Pickled papaya & carrot salad with Cambodian style fried rice which has an unexpected delightful coconut cream to add another component twist to the dish. Everything we tried was awesome! By the end of the night they were sold out! I would definitely luv to try more of their menu whenever they're in town. Tap to pay available. Then an ad for Tisoy Curryative Cuisines popped up on my Instagram feed & I am so glad it did! From the very first message, Matthew the owner was super responsive & made the whole process so easy. He got back to me within 24 hours, his pricing fit our budget perfectly, & he even reached out to our venue on his own to confirm everything was good to go before we even booked. No issues whatsoever. It also meant so much to me to hire a Filipino owned business that actually knows this food rather than some generic catering company just claiming they could pull it off. On the wedding day Tisoy completely exceeded my expectations. They served lumpia during cocktail hour in the cutest little appetizer dishes with sweet chili sauce & honestly it tasted exactly like my mom's recipe. I never got to do a tasting beforehand so I was a little nervous but the lumpia recipe was perfect. Our guests were obsessed. The buffet setup was gorgeous & their staff served at the line which was great for portion control & kept the line moving fast. The star of the night was the whole roasted lechon. It was absolutely beautiful & cooked to perfection. We did a lechon cutting photo instead of a cake cutting & it came out so good. We had guests who flew in from the Philippines & even they said they could tell it was cooked by Filipinos. That honestly says it all. The staff bussed all the tables as dinner wrapped up & then came back out at 9pm with a late night lumpia snack that everyone went crazy for. The next morning I woke up & Tisoy had already posted a reel of our wedding on Instagram. I wasn't expecting that at all and it was such a sweet & impressive touch. If you need a filipino caterer who truly shows up, knows the food, & handles every single detail from start to finish, book Tisoy Curryative Cuisines. You won't regret it!
