It's pretty straight forward - you get a warm bowl of water to dip the dry rice paper in. Then you place your rice paper on your plate (key is to keep the dish dry) and load up on vegetables. you get a vinegar broth to cook the meat in and once meat is cooked, you place it on top of your vegetables / rice paper. Start rolling your own rolls and dip in the fish sauce. The rice paper is too small to try to fold it all on 4 sides. At home, I eat this quite a bit (of course, a bit different) so I was happy to see this so close to our place. Ordering was very straight forward. Service is attentive. Bonus: the owner speaks Vietnamese, some waitresses speak Chinese, most speak English, and all of them speak French. You can't go wrong. The Vietnamese fondue hit the spot for us and brought me back home in the middle of Aix. Even though the menu swings from Thai to Chinese to Korean (which is pretty weird but not really surprising), the Vietnamese fondue is fairly authentic. No mam nem sauce but the nuoc mam was fine. Ask for the rooster sauce for spice. It's about 19 euro per person to order this. All vegetables can be refilled for free. You can definitely have a nice meal here without hurting your wallet. We ended up ordering a bottle of rose and 2 extra plates of beef (30 euro) so our bill was about 90 euro total. Pretty pricy for something I eat so regularly at home but worth it for us.
