The owner explained the store format: It's like 3 "markets" in one -- cheese; meat; fruits and vegetables -- each having it's own boss, but united under 1 roof. At check-out, you (the shopper) won't notice the difference. It operates like one food store.
In particular, considering the very mundane and predictable selections available in local area supermarkets or farmer's markets, Provenc'Halles is rather amazing. Quality and freshness of the produce is excellent, as are the prices. Very nice cheese selections from France and outside France (it's nice to have a break from local St. Nectaire and Contal varieties).
On a recent look through the meat department, we found all the essentials and even turkey, which the butcher was happy to cube up for us to make our own kebabs.
I hope the cleanliness and nice selections are clear from the photos I attach. It really is a stand-out store for the area. I didn't check the store hours, but my most recent receipt shows opening times of 6h-19h30. Not sure if that's every day. They don't have a website (I asked). Accepts credit cards.
